Ok we tried a new one last night. It was a chicken ravioli. the ravioli was home made using a recipe from the good eats show.
1: 3 cups flour
2: 2 Large eggs
3: 3 tbsp water
4: 1 tsp olive oil
5: 1/2 tsp salt
To do this by hand is a lot of work, but I will tell you it is worth it.
Instruction by hand. (do not just squish every thing together).
Put your flour in a large bowel and make a well in the middle. The eggs, water, salt, and oil mix in a separate bowel. Once you have made your mixture pour it in the well in the flour. Place two fingers in the egg mixture and circle around slowly pulling more flour into the center. You may not use all the flour for this, stop when a soft but not runny ball is formed you can always add more flour as you knead it. Ok now that you have you ball of dough if your are going to use a pasta machine form the dough into a disk wrap in plastic wrap and place in the refrigerator a let it rest for an hour. If you going to do this by hand place the dough on a floured surface and knead it for 8-10 min before wrapping it up and putting it in the refrigerator.

I had some chicken I boiled and let cool.
Everything is finely chopped
1: 1 cup Chicken
2: 1 Tbsp green onion
3: 1 tbsp bell pepper
4: 1 tbsp portabello mushroom
5: 1 tbsp fresh parmesan cheese
6: peper to taste; I used black pepper.
Combine ingredients in a bowel and set aside.
Time to put it together
Cut dough in thirds
Place dough on a floured surface, and with a rolling pin coated with flour ( your hands to) start rolling the dough turn the dough a 1/4 turn every so often do this till the dough is very thin, but still holds together. I used a 8 oz glass to cut my circles place to the side until you have rolled out all of your dough.
Now that the dough is rolled and cut you need to mix 1 egg and equal portions of water for an egg wash.
take one circle and place a tsp of meat mix in center. brush you egg wash around the edge, place another round on top, start from one side right against the ball of meat and press down and work your way around till the whole thing is sealed. I then used a fork to crimp the edge. do this till they are all done we got about 18 out of this.
the recipe says to boil them for 3-5 min, but I fried them in olive oil till golden brown. They puffed up like a tortilla I then put them in a bowel and melted parmesan cheese over them, and yummy. Just remeber you can put any kind of sauce you like on these.
It's a lot of work, but it was worth it.
