I make my meals healthy by changing out some things. For instance,
~ wheat/gluten free pasta
~ brown rice
~ using lots of veggies
For instance I make this awesome vegan chil (I actually got the recipe from my friend who is vegan) and most of the ingredients are fresh or canned veggies, beans, and veggie stock/broth.
I made a breakfast casserole that I usually put meat in, but instead put spinach, light cheese (before I gave up dairy), eggs, onions, mushrooms and just about any other veggie you like.
You can alter ANY recipe to fit your dietary needs and also there are a ton of really great healthy recipes on SP too. They even have vegetarian and vegan recipes.
