This is really great, I am going to try it the next time I want mashed potatoes or potato salad!

To all who love making potato salad but hate peeling the boiled potatoes, here is the solution for easy peeling. This will BLOW your mind. Well, we do learn something new every day.

I wish I had known about this thirty years ago. Peeling the cooked potato was the least desirable part in making a potato salad. Enjoy. It works.

Here's what I had for dinner last night. Filled me up and I was satisfied.

CHICKEN AND SQUASH

1 small onion, about a half cup, diced
1 med zucchini or 2 small, quartered, than sliced
2/3 c cooked brown rice
3 oz cooked chicken, diced (I used chic breast for calculation)
1/2 c Hunts Spaghetti sauce

Spray a 10 inch skillet with pan spary. Saute the onion in a skillet set on medium heat. While the onion sweats, slice zucchini. Add zucchini to skillet, stir as needed. Add the rest of the ingredients and enjoy. Quick, easy and satisfing.

Calories 333.2
Total fat 3.1 gm
Cholesterol 49.3 mg
Sodium 664.1 mg
Carbohydrates 50.9 gm
Dietary fiber 9.1 gm
Protein 26.6 gm

If you don't like the sodium count, omit the spaghetti sauce, save 600 mg of sodium.

Karen, that recipe sounds great. A friend of ours has a large garden. One day last week he brought over a large bag of zucchini and squash. There were only 2 of the zucchini. We had a stir fry. One night I made a dip for the zucchini, squash, cucumbers, etc.
There were so many squash that I shared with a neighbor. My DH only likes them in a stir fry or raw.

I'm trying to avoid starch and sugar, so I'm always dreaming up something good to bake that doesn't have either.

Saturday night I made a zucchini casserole. I sauteed half a large onion in a tablespoon of olive oil and then added a can of whole tomatoes (which I drained and chopped up a bit). I seasoned with Italian herb seasoning, and sea salt.

Then I layered fresh sliced zucchini (from the farmer's market) with the onion/tomato mixture and some grated Italian blend cheese. I used about one pound of sliced zucchini and made 3 layers. I baked it at 400 degrees for 20 minutes, then added a final layer of cheese and baked it another 20 minutes. It came out golden brown and tasted heavenly. Joe and I both loved it.

This qualifies as a low carb dish, if anyone is interested in those.

Kale chips - you either love them or you hate them.

Wash the kale and cut it off the tough center stem. Let it dry then spray with olive oil spray or toss in a teaspoon or so of olive oil.

Cover a cookie sheet with foil and spray with the olive oil. Heat oven to 250. Season the kale with salt or whatever. I sometimes use Mrs. Dash Lemon pepper, Sometimes a light sprinkling of parmesan cheese or onion powder.

Bake until crisp - 20 to 25 minutes.

I was pressed for time today, because we went to our lake property and spent the day enjoying this 64 degree weather. So for dinner tonight, I cooked some Whole Wheat Spaghetti, opened a can of low fat chili and put it on top of the Spaghetti, sprinkled it with a little Parmesan cheese. It was really good and has stayed with me. I'm not even wanting to snack this evening. Healthy eating. Yum Yum.

Turkey Chili
(I also make this with soy crumbles instead of ground turkey for the vegetarians and vegans in my family)

3 pounds ground turkey
1 red onion - chopped
1 can black beans (rinsed and drained)
1 can corn (drained)
1 large container of Safeway salsa - on the bottom shelf with a handle - looks to be about 1/2 gallon)

Brown the trukey and onion until done - I drained as much fat as I could. Add the black beans, corn, and salsa and simmer for one hour.

This makes about 10 cups and I figured 5 to 6 points per cup.

Chicken Pot Pie (hints at end of recipe)

4- ready-to-bake frozen pie crusts
2- boneless, skinless chicken breasts, boiled & diced*
1- can cream of chicken soup
1- can cream of potato soup
1- can mixed vegetables, drained
1- Cup milk
salt & pepper to taste

Directions:
Combine cream of chicken soup, cream of potato soup & milk. Next add mixed vegetables & diced, cooked chicken (*may use about 2 cups canned chicken if you are in a hurry). Add salt & pepper to taste. Pour evenly into 2 frozen, unbaked pie crusts. Place extra pie crust over each filled pie crust, leaving the pie tin in place. Bake in 375 degree oven for about 45 min. Remove pie tins from tops of pies and continue to bake another 5-10 min. Serve warm with salad on the side. Makes about 16- 1/2 Cup servings.

**Unbaked pie may be placed in gallon sized zip-top bag & frozen to be baked at another time.

The chicken pt pie was delicious. Next time I would season it some. Also you can buy low sodium Veg-all or use any left over veggies. Does anyone know if you can buy pie crusts that are low fat?
I like the idea that I have another meal in the freezer. It was our main meal of the day, so overall the calorie count wasn't too high. A salad would be good with it.

This recipe came from a friend on another team. It sounds great.

Chile Relleno Casserole Recipe

1 cup evaporated skim milk
4 egg whites
3 T cornstarch
3 (4oz) cans whole green chiles
1/2 lb lowfat jack cheese, grated
1/2 lb lowfat sharp cheddar cheese, grated (I used regular cheddar cheese as I couldn't find low fat sharp cheddar cheese at the market and it worked fine.)
8 oz can tomato sauce

Preheat oven to 350. Spray a deep 1 1/2 quarter casserole dish with vegetable oil cooking spray. Beat evaporated milk, egg whites, and cornstarch until smooth. Split open chiles, and rinse to remove seeds, drain on a paper towel. Mix cheese together and reserve 1/2 cup for topping. Alternate layers of chiles, cheese and egg misture in casserole dish (makes about 2 layers). Pour tomato sauce over top layer, and sprinkle with reserved cheese. Bake 1 hour or until done in the center. (It becomes nice and brown on the top).

Makes 8 servings at 225 calories and10.0 grams of fat per serving.

My DH really likes pork, but I don't eat too much of it. However I found this recipe on Spark.

Slow Cooker Pork Chops with Scalloped Potatoes

2 medium potatoes, washed and thinly sliced
3 bone-in pork loin chops ( I used 2, because I give my DH half of mine)
1 large onion separated into rings
1 tsp. butter
1 1/2 Tablespoons all purpose flour
1 cup chicken broth (fat-free)
1 cup milk (low fat)

Place potatoes in a slow cooker coated with cooking spray. In a skillet, brown the chops. Place chops over potatoes. Saut onions in drippings and add flour, broth and any additional seasoning until smooth. Add milk and bring to a boil, cook and stir for 2 minutes or until thickened. Pour sauce into slow cooker and cook on low for 8-10 hours, or until meat is tender.

That lentil stew sounds good -- might try that!

I have tried to like things with black beans in them and I don't know if it's the look or the taste so much but I just can't quite eat them....

I bet I could make it without them but that would change the nutrition.

Black Bean Salsa

Makes about 5 cups, 1 serving is 1 Cup

3 (15oz) Cans Black Beans drained
1 (11oz) Can Mexican Corn drained
2 (10oz) Cans Diced Tomato with Chilies partialed drained
2 Tomatos diced
2 Bunches Grenn Onions chopped
Cilantro for Garnish

Directions
1.In a large bowl, mix together black beans, Mexican-style corn, diced tomatoes with green chile peppers, tomatoes and green onion stalks. Garnish with desired amount of cilantro leaves. Chill in the refrigerator at least 8 hours, or overnight, before serving.

(This was a big hit with my vegetarian grand daughter and my son's new girlfriend (Vegan)

Hearty Lentil Stew (Vegan version)

1 c. dried red lentils, rinsed and drained.
1 1/2 c. peeled and cubed sweet potato
1 yellow onion - wedges
2 medium carrots, peeled, 1 in. cubes
1 med red bell pepper - 1 in pieces
1/2 t. dried oregano
1/8 t. red pepper flakes
28 oz. broth ( I use veg. broth)
1/2 t. salt
1 T. extra virgin olive oil

(optional garnish but yummy)
4 slices crumbled soy bacon
1/2 c. chopped green onion

In 3.5 - 4 qt. cooker, combine lentils, sweet potato, onions, carrots, bell pepper, oregano, pepper flakes and broth. Cook and cover on high 3 hrs or low 6 hrs (or until carrots and potatoes are done.)

When stew is cooked, stir in salt and olive oil. Garnish with bacon and green onion.
164 cal - 3/4 c. serving.

Dressing or dip

Buttermilk salad dressing

3/4 Cup LF Buttermilk
2 C low fat Cottahe Cheese
1 Pkt Ranch Dressing Mix
Fresh Chive
Blender all ingredients until smooth, chill for 1 hour.

I tried this last night and it is delicious.
Beef & Blue Cheese Tart
Pre time 20 mins Cook Time 15 mins
Servings 6
1/2lb lean ground beef
1 3/4 Cups sliced mushrooms
1/2 medium red onion sliced thin
1/4 tsp salt
1/4 tsp pepper
1 tube refrigerated pizza crust (13.8 oz)
1/2 C reduced fat sour cream
2 tsp Italian seasoning
1/2 tsp garlic powder
3/4 C crumpled blue cheese
Cook beef onion and mushrooms over medium heat until no longer pink. Stir in salt & Pepper set aside.
On lightly floured surface roll crust into a 15 x 12 rectangle. Transfer to a parchment lined baking sheet.
In small bowl mix sour cream italian seasonings and garlic powder. spread over crust to within 2 in of edges. Spoon beef mixture over top. fold edges of crust over beef leaving center uncovered.
Bake at 425 for 15-18 minutes.
Using parchment paper slide tart onto a cooling rack, sprinkle with blue cheese.
Let stand for 5 minutes before serving.
1 serving 328 calories 12g fat 43mg cholestrol 803mg sodium 35g carbs 1g fiber 19g protein

Green Beans with Toasted Garlic.
1 lb green beans trimmed
2 tsp butter
1 tsp olive oil
4 cloves garlic thinly sliced
1/4 tsp salt
1/4 tsp pepper

1. Bring a large kettle of water to a boil, add beans cook for 5 minutes.
Drain, and plunge into ice water.
2. Heat a large skillet over medium-high heat. Add butter and oil; swirl until butter melts. Add garlic; saut 30 seconds. Remove garlic and set aside. Add beans; sprinkle with salt and pepper. Cook for 2 minutes, tossing frequently. Top with garlic.
Yield 4 1 cup servings.

Asian Crunch Salad

Mix together and chill 24 hours:
1 cup oil
1/2 cup sugar
1/3 cup vinegar
2 flavor packets (chicken flavor) from Maruchen oriental Ramen noodles

Just before serving, toss together:
1 lb. bag cole slaw mix
1 cup slivered almonds, toasted
1 cup sunflower seeds
1 bunch chopped green onions
2 packages of Ramen noodles crushed (roll with rolling pin)

Pour dressing over mixture before serving.

Barbecue Lentils Recipe

Ingredients
2-1/3 cups lentils, rinsed
5 cups water
1/2 cup molasses
2 Tbsp brown sugar
1 Tbsp vinegar
1/2 cup ketchup
1 Tsp dry mustard
1 Tsp Worcestershire sauce
16 ounces tomato sauce
2 Tbsp minced onions
1/4 tsp Liquid Smoke, optional

Instructions
Add lentils to water, bring to a boil and simmer for 30 minutes or until tender but whole. Add remaining ingredients to the cooked lentils and bake at 350 degrees F for 45 minutes.

Yield: 8 servings

Dump into the crockpot:

2 cans of chopped organic tomatoes
1 eggplant, peeled and chopped
2 or 3 zucchini, sliced
1 onion, chopped
1 bell pepper, chopped
fresh garlic, 1 or 2 cloves
thyme to taste - I sprinkled about 1/4 tsp on top

Stir it all together and cook until all veggies are tender. I actually microwaved the onions and bell pepper for about 3 minutes before putting them into the crockpot because I wanted to have it for lunch and the other veggies cook quicker.

Flat out pizza

1 slice of flat out bread
Spray both sides with Pam
Put in oven at 300 for a few minutes, just to "crisp up" the bread a little
Remove from oven.
Add pizza sauce or spagetti sauce (I use spagetti)
Add low fat mortz. cheese
Add any veggies you want.
Put back in oven directly on rack until cheese is completely melted (10 minutes or so)
Very low calorie pizza!

The salsa below is really good on chicken or pork or as a side.

Nectarine Salsa
2 Cups diced Nectarines
1/2 Cup diced red pepper
1/4 Cup sliced red onion
2 Tbs chopped cilantro
1 1/2 Tbs lemon juice
2 tps finely chopped japapeno pepper
1/4 tsp kosher salt
1/2 Cup diced peeled avocado
Combine all ingredients except avocado stir well to combine, gently toss in avocado.
