I have never roasted grape tomatoes, but now I think I will try!
I do slice them in half and put them in the food dehyrator - when they get "leathery" my son in law eats them as a snack food. They get sweet and chewy. I fill peanut butter jars with them and he eats them at work.

I'd never have thought to use garlic tops in pesto -- what a great idea! I think my sis-in-law is growing garlic, so maybe I can beg some tops off of her.
The roasted grape tomatoes sound delish! I think I'll pick some up at Trader Joe's tonight. I haven't had nearly enough veggies in my diet lately :(

I LOVE goats milk cheeses... Chevre was my favorite. Farmer's cheese, same deal. I had to cut the cheeses out of my diet, though, so I will enjoy them vicariously. I would love to sneak some in but I will pay for it if I do...
New cookbook: GREAT IDEA!!!!!
Gardens rock. I wish I could have one here. My daughter and her hubby own a farm out in KY. They planted garlic and gave me some of the scapes (the green tops) one year - it makes the MOST AMAZING PESTO EVER. I really wish I could get my hands on some! I love pestos, and I thank you for bringing that up. Great idea!
Just thinking about gardening gives me a few more ideas. Have you ever roasted grape tomatoes? I toss them with a tiny bit of olive oil, a pinch of salt and some balsamic vinegar and let them roast until they look good. I had some leftover last night so I cooked up some zucchini and onions and garlic and dumped the leftover tomatoes in... WOW. Very fresh and bright tasting, even with my altered tastebuds. Hubby, who is NOT vegan or vegetarian by any means, says he wants me to make that more often. SCORE!

Beth, I am jealous of your fresh goats milk paneer! That sounds soooooo yummy. I made goats milk farmer cheese for the first time a couple months ago, and I couldn't believe how easy it was. I don't know why I don't do it more often!

Tracy, how about a new cookbook to get you interested in food again? That usually inspires me. I've been finding quite a few at used bookstores lately, which makes them more affordable (cookbooks have gotten expensive!) I found a beautiful vegetarian cookbook from the 70's with pretty drawings -- more like artwork than a cookbook!

Do you read any food blogs? There are so many wonderful vegan blogs out there. They're full of recipes and pictures to inspire you. I've probably posted my favs before, but let me know if you need a list of good ones :)

Ah - we need to get together and even out! The garden is making me want to make tons of food. I don't think you can get much better than home made pesto! Stir it into hot pasta and the fragrance of basil is just amazing!

Not vegan - but a friend of mine has goats that just had babies and I have been getting fresh goats milk and making paneer. Fresh home made goat cheese from happy goats!

i am feeling very blah, even yuck about food lately. The radiation treatment seems to have affected my taste, and it makes me very uninspired about food. But I know I need to, because when I don't, I end up getting bigger and bigger (starvation mode, then the occasional binge... stupid, I know).

SO... what are you eating lately that might inspire me to fix something nice? Even if it is a recipe I can't eat from the vegan standpoint, I can usually tweak it to fit...
