Lassi is a sweet and spicy beverage from India that traditionally is made with yogurt. This dairy-free LFRV version is delicious and makes a wonderful breakfast or snack.

Ingredients

Makes 3 servings

2 cups water
1 frozen or fresh bananas
1 small ripe mango, peeled and cut into chunks
3 pitted dates, chopped
1 teaspoon ground cardamom
1/4 teaspoon black pepper

Directions

Combine all ingredients in blender and process until very smooth and creamy. Serve cold.

Low Fat Raw Zucchini Hummus

Ingredients:
- 12 oz zucchini, about 4 small
- 2.5 Tbsp of sesame seeds ground, or about 2 Tbsp tahini
- Juice of 1 lemon, or more to taste
- cumin to taste

Note: No salt in this recipe. Try it without at first if you usually add salt. The lemon really makes it taste salty. You could also add a little celery in there for more salty taste.

Preparation:
1. Peel the zucchini if you don't want green hummus
2. Blend all in a blender or food processor.
3. Taste, add more lemon or cumin if necessary.
4. Serve with cut up veggies for dipping (I like cucumber, tomatoes especially, and lettuce leaves)

This is a little watery so just stir frequently.

Here's a great Low Fat Raw Vegan recipe that is still low in fat - just a few overts- It's by the Marvelous Megan Elizabeth:

Zucchini Pad Thai With Citrus Ginger Dressing

Dressing:
1/2 cup of fresh OJ
1/3 cup fresh coconut meat
1/2 cup cilantro
1/3 cup chopped scallions
2 Tbsp fresh lemon juice
1 1/2 Tbsp raw tahini
2-3 leaves of fresh sage
1 quarter sized slice of ginger

Noodles:
4 cup spiral zucchini
1/2 cup spiraled or shredded carrot
1/3 red pepper sliced very thin

Place on a bed of green and garnish with sprouts

I saw a recipe on Sparks recipes that looked pretty good. Even though I am not into the total eating raw thing YET! This looked amazingly simple and yummy.

Cut peeled bananas in 2 inch chunks and place in freezer bag. Seal and allow to freeze for at least 24 hours.
Remove from freezer, set on counter for 10-15 minutes and then whiz in food processor until smooth. I added a little vanilla.
Tastes like soft-serve ice cream!

Here's a delicious sounding recipe from Teri Leventhal:

Sunset Tropical Fruit Parfait

*Ingredients:
- 6 bananas
- 4lbs pineapple
- 5 mangos

*Preparation:
- Peel your mangos and peel and core your pineapples.
- Dice your mangos and pineapples into bite-sized pieces.
- Blend your bananas into a pudding.

*Presentation
- Layer your mangos into the bottom of a glass. Cover with banana pudding. Place a layer of pineapple on top of your banana pudding, and then cover that layer with more banana pudding, then more mangos. Repeat until you have filled your glasses.

*Optional Variations:
- Fill your glasses with other fruit mixtures Ė pick your favorite fruits! Blueberries, strawberries, or raspberries would be fabulous with this as well.

Raspberry Sorbet

Ingredients:

1/2 small avocado
1 lime, juiced (or more)
2 cups of frozen raspberries
1 teaspoon vanilla extract
1 teaspoon agave or 2 medjool dates (pitted)

Optional extras for toppings: fresh or frozen whole raspberries, freeze dried berries or other fruits,

Directions:

Put all ingredients together (except toppings) in a food processor fitted with the ďSĒ blade or into a high speed blender like a Vitamix or Blendtec. Add the berries into the processor straight from the freezer so they add the icy effect.
Process until the mixture is only just well combined as you donít want to lose the ice cream consistency and turn it into a liquid.
Serve with toppings of choice, and enjoy each and every bite

While frozen food destroys the healthy bacteria in our digestive system if eaten in large quantities, we all want some kind of cool refreshing dessert on a hot summer day. Here's a deeeeeeelicious one to try:

2 frozen bananas (to freeze: peel and slice into quarter-size pieces and put in freezer on a small plate until frozen or almost frozen)
frozen strawberries (add just a few at a time to taste until it is to your liking)

Prepare:

Put the frozen bananas in your food processor. Whirl to process. Add the frozen strawberries a few at a time. Whirl until smooth and creamy. Eat immediately. Serves 1-2.

Raw Vegan Strawberry Pecan Spinach Salad

Makes 2 dinner servings or 4 side servings

Ingredients:
Strawberry Pecan Spinach Salad:
11 oz container baby spinach
2 cups of sliced strawberries
1/2 cup red onion, diced or sliced
1/3 cup raw pecans

Strawberry Chia Dressing:
1 cup fresh sliced strawberries
1/4 cup clementine mandarin orange juice (use the sweetest FRESH oranges you can find)
4 small dates, pitted (or you can sub 1-2 tbsp of liquid sweetener)
2 tsp apple cider vinegar
1 tbsp chia gel (or 1 tsp chia seeds)

Directions:
1. Slice pecans lengthwise on a cutting board so they are in long halves. (This makes them go farther and youíll use less in the recipe)
2. Arrange salad ingredients into 2 large bowls or 4 medium sized bowls for starter salads.
3. Blend dressing ingredients together and drizzle over salad.
4. Serve immediately.

Additional Tips:
I donít recommend using frozen strawberries for this recipe as they are usually too tart and sour. Use dark sweet strawberries. Store bought orange juice is also not a good base for this dressing. I donít like store bought orange juice because itís highly processed and quite acidic compared to fresh squeezed orange juice. Clementines or mandarins are preferable because they are mild and sweet, but you can also use Cara Cara or Valencia oranges if thatís what you can find.

You can make this dressing and keep it for 2-3 days in the fridge. Raw dressings ARE perishable and will not stay fresh for weeks like cooked salad dressings. So this is best enjoyed soon after making it.

What is Chia Gel?

Chia gel is just chia seeds mixed with water. I learned this from Victoria and Valya Boutenko when I met them in my home town of Calgary. When chia seeds absorb water they create this gel that suspends them and it great to add to dressings because it will hold it together much like oil would. So when you use blended fruits or juices for the base of your dressing it will be a little thicker and a better consistency. You can also use psyllium husk powder if you donít have or donít want to use chia gel. Psyllium husk powder is something people often add with some flavour to water to get extra fibre in their diet (not something we generally need as a whole food vegan) BUT it is useful in making dressings because it add some bulk to the liquid and holds it together nicely. You cannot taste it and it will not affect the flavour of your dressing. It just makes it more into a thin gel than just stay a watery dressing.

To make chia gel I mix 1/3 cup chia seeds into a container (that can go in the fridge) with 2 cups of water. You have to add chia to the water, and not pour water over the chia to prevent it from clumping together in uneven clumps. This lasts for 2-3 weeks in the fridge and you can add a tablespoon or two to your dressings or smoothies to get some whole food omega 3′s into your diet. This is more of a recommendation for raw foodists, if youíre not into raw food and wonít use this amount of chia gel you can just add 1 tsp of chia seeds to your dressing or smoothie if desired instead.

Currently, I'm finding it easier to eat my greens in green smoothies where the greens taste is hidden by fruit!

O.k., I confess, this salad dressing does leave a puddle at the bottom of your plate. But it tastes sooo good, you'll just drink it when you're done.

1/4 C. fresh-squeezed pulpy orange juice
3 Roma tomatoes, cut in half
4 large basil leaves

Blend in the high-speed blender and enjoy over salad.

4 clementines
3 Roma tomatoes
1 tsp raw coconut butter or 1 Tbs raw tahini

Use the coconut butter if you want a sweeter dressing. Also you don't need as much fat to get the flavor. The tahini makes a nice savory dressing.

Made an awesome salad dressing this morning (trying to set things up for a healthy week - easiest to make a large batch of stuff and then use it . . . ).

In Vitamix blend:

1 cup water
1 oz almonds
2 sticks celery
1 inch jalapeno
1 bunch cilantro
1 slice 2" thick pineapple
1/4 peeled lemon (no seeds I hope)
1 small apple (cored of course)
4 medjool dates


OMG sooooooo yummy. It's not lunch time yet, but I'm looking forward to it.

A great winter season green smoothie I just figured out:

3 cups water
6 medjool dates
1 bunch spinach
1 cup raw cranberries
1 orange (peeled of course)
1/2 tsp cinnamon
1/4 tsp vanilla extract
1/2 tsp pumpkin pie spice

Blend well - make sure it is at room temp before drinking. mmmmm mmmmm

Hope you're all enjoying eating low fat raw during the winter! This is just one recipe that everyone can make as long as you can get the ingredients.

I am having such fun with all my heirloom tomatoes and peppers my garden is producing. Here is a delicious "salsa" that I use to top my salads. The lime juice and celery really help if you struggle with salt cravings, or miss that salty taste on your salsa.

1 large cucumber, peeled and chopped
4 cups heirloom tomatoes, chopped (mix red and yellow if you can)
3 large stalks celery, finely diced
1 large sweet pepper, chopped
Juice of 1 lime (or half a lime if it is a large one)
Cilantro, if you enjoy it, finely chopped

Apple-Jicama Slaw w/ Lemon-Tahini Dressing

3 apples
3 medium carrots
3 stalks celery
2 or more cups jicama chunks
1 lemon, juiced
2 Tbs. tahini

Place carrots, celery and jicama chunks in food processor and pulse until finely chopped. Remove and place in a large bowl. Quarter and core apples, pulse in food processor. (If you put them in with the other stuff, you will have apple sauce before the other items are chopped.) Mix apples in with the rest of the slaw mixture.

Whisk together lemon juice and tahini. Mix into the slaw.

This makes a great topping for lettuce. It also takes a long time to chew and is very filling, for a low amount of calories. So, if you are trying to cut calories, it is great. If you are new to raw foods and trying to eat enough calories, maybe skip this one.

My sister-in-law's brother brought the most heavenly salad to Memorial Day. He said he got the recipe online at the Food Network. I made a few tweaks to make it raw and lower in fat.

I never would have thought to put cinnamon with mango. It was AWESOME!

4 mangos, chopped (use Autalfo, the tear-drop-shaped yellow ones, if you can get them)
2 Granny Smith apples, peeled and chopped
1/2 cup coconut chips or raw cashews
1/2-1 tsp cinnamon

Would you be willing keep this section focused on supporting a low fat hygienic lifestyle? High fat recipes or even cooked foods can fit in to our lifestyle but there are many resources for those out in the other Spark teams.

Please share recipes that have:

-no oils
-no salt or soy sauce
-no refined sweeteners
-limited amounts of plant-based raw fats such as avocado, nuts and seeds
-no cooked foods
-no animal products
