Wow talk about crazy coincidence! I am right now enjoying my own bowl of potato leek soup and was browsing through SP. I checked out the team's page and saw this topic! I know it's pretty old but I thought I'd contribute anyway.
I added a sprig of fresh rosemary, a bit of dried thyme and a bay leaf. I also chopped up two fennel bulbs/plants - I don't really know what they are but I'm trying to experiment with vegetables. My recipe called for creme fraiche or heavy cream to give it some weight but I added organic greek yogurt instead - it's delicious!!
I like to use leeks sauteed in butter a slug of white wine, a bit of fresh dill, white pepper, and top with fresh chives. If I'm feeling a bit decandent, I top with some bacon crumbles and some grated cheese too.
