We had this last week too, and it was good, so had it again. Only this time I used turkey bacon instead of ham slices. Yummier! It's a Spark People recipe with chicken breasts stuffed with mozzarella cheese, ham and spinach, coated with a bit of flour. You fry it in some olive oil and margarine and then bake it for ten minutes. You use the drippings, plus some chicken broth and cream, and a tbsp of flour for a tasty liquid to go with it, that we placed on rice tonight. Yum! We also had corn on the cob, broccoli slaw and fruit salad.
I sure am having something especially yummy for dinner tonight. I made Spark People's Maple Pecan Chicken last night and hubby loved it so much he said I'd better not lose this recipe. He wanted more, but I told him we can have it again tonight if he'd like, and he was all for it. :) We also had SP's recipe: Grilled Roasted Vegetables with Pineapple. I baked it in the oven, and it took awhile. Even at 45 minutes it didn't seem like the potatoes were totally done, but then I baked it in a glass pan, not a roasting pan like it asked me to. The recipe was made for grilling, but gives other options for making it. This is SPICY, let me tell you. I had it go down the wrong way and had to add a slice of bread to my day just to absorb the spice in my esophagus that was burning, but otherwise, it's quite yummy (though I originally thought we might think the pineapple in it weird). I used zucchini instead of mushrooms, but they say you can replace some of the veggies with whatever seems best anyway. It worked well. Hubby doesn't like mushrooms. So, since it makes six servings, like the chicken recipe, we're having it again tonight too. Hubby eats two servings.
My hubby and I recently discovered Kashi's pizzas in the freezer section at our local grocery stores. They are so very delicious for such a healthy prepared food. A third of a pizza is around 250 calories! Kashi Roasted Vegetable Thin Crust pizza and Kashi Margherita Pizza are on our menu.:)
