Hey COCOINAZ, That sounds delicious. What's funny is that I believe that I've cooked enough for two weeks as well...LOL!
I have Broiled Whiting, Broiled Tilapia, Baked Chicken Breast, Boiled Eggs (I boil a dozen at a time), Turnip Greens, Yams, Red Potatoes, Spinach, Collard Greens, Fresh Pineapple and I think that's it.
Tonight for Dinner I'm having Broiled Whiting, Yams and Turnip Greens...I'm on my way to my Nutrition Tracker to update it.

Spent yesterday preparing meals for the week as part of week 2 of the Extreme Diva Makeover challenge. I prepared a turkey tenderloin, pizza wraps, black bean salsa chicken in the slow cooker, and talapia. Then for dessert fixed dreamsicle cups.
Didn't realize how much I had cooked until I started packaging everything all up. I think I have enough meals for two weeks...LOL. Guess it's better to have too much than not enough.
So what are you fixing for dinner?
