My husband always comes up with some quick delicious dinners on the spur of the moment.
If it was just up to me it would be soup or a quick sandwich or cereal/oatmeal for the spur of the moments. Myself I am not into the fancy stuff.
First I check my blood sugar and then I go from there. We fix our meals around the blood sugar.

If even the kids like them-you've got something good there!
Lately, i have been using smoothies and salads constantly. Although, since i am struggling with food issues, cookies keep creeping in everyday. I don't recommend this. I am totally unhappy and i am the only one who can fix this for myself.


So happy you responded to this thread. It's good to see members looking around the team pages!

I always keep Kashi dinners in my freezer. When I come home starved and don't have time to fix something good; just a few minutes in the microwave and they're soooo good; even the kids want to eat my dinner!

If we don't change the direction we are headed, we will end up where we are going.

i have been using good whole grain natural cereals and fat free soymilk or yogurt as a go to meal lately. sometimes i am too tired or lazy to fix anything else. i am not talking about sugary kids products here. my favourites include any of the ezekiel cereals. they do have a lot of calories for a small serving but they are so good for you!

grilled chicken (slices), raw/fresh spinach - microwave 2 minutes, toss.

Add some grape tomatoes while warm and a little bit of light italian dressing - yum!

I love eggs. Yesterday I spent a good portion in the fridge and washed up my huge bag of salad, cut up tomatoes, cucumbers. Then for lunch I had a huge salad with cut up hard boiled egg & light string cheese cut up. Was so good!!!!
My lunch today will consist of a huge salad with a little bit of chicken on it! I'm already craving it!!!

salads and eggs end up being quick easy meals for b'fast lunch and dinner.
as a vegetarian, i have compromised by using organic cage free, cruelty free eggs. i went a long time without eating any eggs but i have a very hard time dieting without them so these seem to be ok right now.
if i have hard cooked eggs ready and waiting, they are a quick easy locarb protein that assuage hunger and keep me going. at any rate, eggs are fast and easy to make no matter how you prepare them.
when you bring your greens home, get them washed and bagged and ready to go. i try to have romaine and spinach in the fridge so i can have a salad whenever i want. measuring 1 tsp. of olive oil , a little salt and it's good to go as part of a meal or add in some protein and it's a meal.

i didn't find the ginger teriaki patties. i'll keep looking when i shop other markets.
i bought lots of fresh veggies and lo carb protein choices so i can continue with the cad plan. no more over eating at the supper meal tho. that will get me nowhere.
time to return to all my go-to's even for supper.

Yummy!! I like the morning star crumbles. I take the Boca Chili and add frozen bird's eye stir fry peppers to it and it is so yummy. Some times I add pepper jack cheese or brown rice. IN fact I may go get me some today and have it. emoticon

had another one of my go-to meals last night.
i love cauliflower so i cook a huge quantity(fresh or frozen) and then add some morning star farm veggie crumbles to the casserole, heat them thru , season with salt and that's it. this is lo fat, lo carb lo cal and very good for you.i've done this with broccoli and green beans too. changing it up with low sodium tamari or salsa adds flavours from different cuisines without adding fat.
you know i am talking about meals just for me here. my son and husband won't eat any of this stuff.

i use fat free ricotta in an italian cheescake . i just did one for my daughter for easter-only eggwhites and no crust, so it is totally fat free and yummy.
most of the time tho, i just scoop some out into a bowl , add the stevia and eat it for dessert. if i don't have the chocolate flavour stevia, i use the powder and add a little cocoa .lo cal, non fat and lo carb so it's all good!

I have heard about that PB2 - and saw it one time at GNC. So I need to pick some of that up too!

I will have to look at Hannaford for the stevia - I really want to cut out the splenda I use. I'm going to try drinking black coffee with stevia (once I get it) and see if I can do without the ff half n half.

What kind of things do you make with ff ricotta?

debi, i have found stevia at the health food stores and even at hannford in the nature's place section.
sometimes i order online ,flavoured stevia from sweetleaf. i have vanilla, dark chocolate and lemon right now. it is a liquid and you use it by the dropper. it really is a nice thing when cutting out sugars , especially with my greek yogurt, fat free ricotta or cottage cheese. also, i use it im my whey smoothies.

i also use a product called PB2 which is a powdered peanut butter product-all natural with greatly reduced fat content. you can order that at bellplantation.com. the pb2 on ezekiel bread is another one of my quick and nutritious go to meals.

mmm, all this food talk and i have triggered hunger rumbles and it is too early to eat supper so maybe i'll have a few almonds to hold me over.

* FF cottage cheese, 1/2 apple cut up, 1 tbsp cinnamon -- YUMMY

* sprouted grain bread toasted with 1 tbsp organic peanut butter and 1tbsp sugar free jelly

* Apple slices dipped in almond butter

* Fage (greek yogurt), strawberries, dash of walnuts and 1 tbsp honey

Tell us about some of the meals that you go to when you need something healthy quick, and easy for any meal of the day.
We all need help and ideas to keep us out of a boring rut!

one of my favourites is:
-1 C fat free plain yogurt (greek is yummy)
-1 C blueberries (fresh or frozen)
-1 T flax meal
-dash vanilla extract
-stevia to taste (natural sweetener)

this is so satisfying and full of nutrition. i use it several times a week for breakfast or lunch.change it up with different fruits if you like.
stevia is my choice because i will not use other artificial sweeteners. that's another discussion topic entirely.
let's see what we can come up with here!
