I'm not vegan, not even vegetarian, but I am really proud of myself about the rice pudding I made this weekend for a veggie friend of mine.
I made it with almond milk, organic brown basmati rice (from california so sorta local), blue agave nectar for sweetening, and blueberries.
The texture wasn't great because I let it cool too long, but the flavor was awesome! I'm just really proud of myself for stepping out of my box in this way.
