For a healthier lower fat vinegarette try mixing:
1 part oil
2 parts vinegar (try yummy apple cider or other flavoured vinegars)
2 parts honey
I make bottles full and store in fridge.
then I add other flavours to the dressing to complement the salad - like garlic, spring onions, chopped chives or basil etc...yummy.
the only reason that I know of to add oil to the dressing is to get it to stick to the salad ingredients...so don't need heaps. the flavour comes from the vinegar and the herbs.
i love all your tips. I always buy the organic or natural products, but this is so much cheaper. I am going to print them all out and stick them up on the kitchen notice board.
