I had something new at one of my favorite restaurants last weekend and I've made it twice since because I loved it so much. I know there was lots of discussion of lentil dishes recently but I cannot remember which thread it was so I'm posting it here. Enjoy!
Lentil Fetoosh Salad
1 onion 1/4 c. EVOO 2 c. cooked lentils celery as much cilantro as you can stand then a little more 1T. chopped garlic cumin, salt & pepper, lemon juice (I use maybe 1T. of cumin and at least 2 lemons including the dressing but I like it flavorful) 1 c. cooked brown rice salad of chopped romaine, tomatoes, red onion and cucumber
-Caramelize onions then add celery, lentils, garlic and cilantro, saute until celery is just soft. -Add cumin, salt & pepper, and lemon juice. -Mix thoroughly with brown rice and serve over salad with a dressing of lemon juice, EVOO, turmeric and garlic, blended.
At the restaurant it is served with fried or toasted pita chips in bite size pieces like croutons. I don't have those around but it really adds an amazing texture. I also don't use the olive oil to save calories and it's still damn good!
water lentils barley mushrooms (dried is best reconstituted in boiling water dump it in water and all) but you can use fresh or canned miso or soy sauce for salt and "meaty" flavor added after lentils are tender
make it more or less soupy depending on how you like it and don't tell the kids or husband what it's name is.... call it Savory NorthWest Special or something like that.
