I am doing well with my challenge. Last night the family had chicken tacos with beans and rice. I choose to make mine a bean and rice taco with lots of home made salsa, lettuce, and spinach. Instead of my normal snake of peanut butter I shared some popcorn with my daughter while we played Wahoo. I did not get enough protein yesterday, but today is weight lifting and I will have a protein drink after.

That is one of the reasons I love my wife so much, she has enough of the Dark Side in her to keep things interesting :) A couple of months ago I have a little bit of pork and it made me sick so I think that just ended any appeal meat had for me. Before that it had been about 6 months since I had any red meat.

Evil! :) How long has it been since you ate red meat? I wonder if it gets to that point for everyone - when you haven't eaten it for a while, the smell of it will turn you off. I have to say I don't mind the smell of the meat cooking. I think it smells good, but it doesn't tempt me to eat it.

I am not doing very well with my challenge. I have learned that if I take my vitamin on an empty stomach or not with food, it makes me sick, so now I'm nervous to take it again. I need to make it a good habit to take it WITH FOOD.

I am doing good even if my wife does have an evil streak. On Fathers day she made chicken fried steak, green beans, and mashed potatoes for dinner. She told me she thought it would be a nice treat for me. I think she just wanted to see if she could get me to eat red meat. The funny thing is I wasn't even tempted. The smell of all that hot oil and meat was not appetising at all! I had a bowl of spicy pinto beans I made earlier in the week, a large plate of green beans, and a small serving of mashed potatoes.

Green beans are one of my favorite. If anyone has a good recipe I would appreciate a copy.

How is everyone doing with the June goals? Are you sticking to your plan or having a hard time?

I barely remember mine... I think I said no red meat, and I have stuck with that, which was hard... well not really. I was away from home for a week, and lots of food was served that had meat, and I just didn't eat it. There was plenty of other food to eat, and I didn't care much about eating anyway.

My other goal was to take my multivitamin every day. I did that faithfully until the bad day and haven't remembered to take it since then. Maybe tomorrow I will make a point of starting up again. Gotta take care of myself even during crisis.

Sharebear, there are many good baked chips on the market. My favorite right now is Tweeds flax and sunflower chips. Very good with salsa.

My goal for the remainder of this month and on into July for the next 30 days:

No sugar (this is not too hard for me)
No fried foods -(this would be very easy, if not for potato chips)--they are really hard for me to avoid completely-so I try very hard to limit them-now, I will try to avoid them entirely for 30 days.

I have decided to join y'all and etch my diet plan in stone.

1) No red meat - yuck!
2) No dairy - double yuck!
3) Chicken and turkey only once or twice a week. I wouldn't eat any of these but I have to eat some meals with my family.
4) Fish only once or twice a week.
5) No fried food
6) No refined sugar
7) Low sodium

With it all written down it seems kind of extreme, but I have never liked dairy or sweet food and drinks, and red meat has never been a favorite. So my only real change is to cut back on the amount of poultry and fish, stop deep frying everything, and lose the salt shaker.

I'm a little late, but I'd like to join the June challenge, too.

My goals:
* 2 meatless dinners each week
* Eat a small salad every day
* Don't let any CSA veggies go to waste (I'm borrowing this idea, too!)
* Try 1 new meatless recipe each week

My goal for June ...and beyond ( I hope)...Eat The Rainbow....
I plan to focus on eating seasonal foods that reflect each color of the rainbow.
By doing this I know I will be consuming the proper nutrients my body requires to stay healthy. emoticon

Heya Flexies! I just came up with that... you like? :))) I'd sure like to see some more June Challenge participation... Anyone? Anyone? Jump on in and list YOUR idea of YOUR perfect diet.

I hesitate to use the word "diet." People seem to get their undies in a bunch about it. "It's not a diet, it's a lifestyle change." Yeah, I get that. But "diet" at its most original meaning is just "the food you eat." Whether you're trying to lose weight or not, the foods you eat comprise your diet. So, yeah, I guess I've made the mental leap from thinking of myself as "being on a diet" to having made a lifestyle change. But for simplicity, I like to still refer to "diet" in the generic sense. Ok, just wanted to explain in case anyone had their undies in a bunch.

Seriously, jump on the June Challenge bandwagon! :)))

June will be hard for me. My sister is coming to help take care of me for 2 1/2 week

Chicken at least 4 times a week.
Vitamins and supplements
2 fruits & veggis a day
rice or potato each day

I'll jump on this one.

My June Goals are:
Track my nutrition daily and come within my guidelines for the items I am tracking.
No Red meat.
Three Vegetarian Days a week.
Poultry, Seafood, eggs and dairy are ok on my list.
5 fruit/vegetable servings a day.
Take my vitamins every day.

* I would love some good lentil recipes, if anyone has one.

NO red meat.
Experiment with beans and lentils to find recipes I like.
Poultry, eggs, dairy, fish are all okay on my list.
Get my 60 grams of protein EVERY day.
Take my multivitamin EVERY day.

How's this for a challenge:

1) Identify what your flexitarian/vegetarian diet looks like. No meat? Only certain meats? Meat how often? Is dairy okay? Are you trying new protein/iron sources?

2) Stick with it! Remember you're the one setting the goal and no one else cares if you do it or not (probably... unless your spouse or doctor is on your case for some reason).

So, while you may be thinking dreamily that someday you'd like to be a full-fledged vegetarian or vegan, maybe you're not quite there yet and want to set a goal for NOW - the month of June. What's your goal? That's the challenge.
