I love lentil loaf. I make it just like my mom's meatloaf, but I use lentils instead of beef and add grated mushrooms, garlic, tomatoes, onions, peppers, and even sometimes carrots. I also use eggs and oatmeal to hold it together. It works out great.

Quick lentil salad: Cook lentils 20 minutes do not over cook, let cool, add chopped ( small) celery, onions, carrots, garlic, raisins, salt, pepper, and some olive oil. stir.

1) green lentils, diced sweet potato, tomato paste, dijon mustard, with basil and mint - refreshing cold salad served with sliced oranges
2) green lentils cooked with shallot and rice vinegar (without salt), make sandwich of kale confetti (tossed with lemon, salt and pepper), sliced avocados, and mashed lentils...on a wholesome bread
3) orange lentils, onions, mild green chilis, garlic, cumin, use as your "meat" in tacos
4) lentil pie, make crust, fill with carrots, diced yams, red onions, green onions, mushrooms, turnip, parsley, garlic, dash red wine or balsamic vinegar leftover lentils, some rice flour for thickening, put upper crust on and bake slow heat for and hour, top with greek yogurt and horseradish, this one i made extra one and freeze back.
5) crock pot vegan chili, garbano beans, black beans, soaked overnight and cooked for full day, hour hours to finish add carmelized onions, carrots, chopped tomatoes and french lentils, can of corn, 1jar favorite salsa

Can you tell i eat lentil about four times a week ;-)

Lentils complement a vegetable stew. Cook with vegetable stock, add chopped celery, onions, carrots, mushrooms, zucchini, red & green peppers, spinach - season & cook. drizzle a little canola or olive light oil over and serve with a warm multigrain bread. spinach adds a special flavor.

I throw them in salads and use them to thicken tomato sauces. I've seen recipes for veggie lasagna that use lentils instead of meat, too.

Lentils are really easy to cook, and especially in teh summer, when i don't want the ovan or stove on for too long, i can crock pot them in just an hour or so.

but i'm kinda bored with my typical "dal" type dish.

any other different suggestions? I have green (French), brown, and red, so all kinds of ideas welcome!

Just trying to learn to eat right, before i worry too much about cals.
