Month of Meals: Vegetarian Pleasures by the American Diabetes Association
I do not have diabetes. I purchased the book for the easy meal planning. Each page is split into thirds for you to select a breakfast, a lunch, and a dinner for the day. Each segment is a complete meal and the recipes.
The ingredients are not difficult to find. The recipes are good. If you ask my husband what he wants for a veggie, he will say a can of corn or a can of baked beans. Every single day. Tonight he ate a meal selected from this cookbook. He went back to the stove to get a second serving.
The general information pages in the front of the cookbook are concise and helpful for beginner vegetarians.

I recently got Veganomicon: The Ultimate Vegan Cookbook by Isa Chandra Moskowitz. . I found it great. It has been helpful for starting out as vegetarian. It also has some good recipes that I have already tried. I got the Kindle version, but plan on getting the book also.
A friend got me "How to Cook Everything Vegetarian" by Bitman. It is really extensive. It gives you easy split peas soup, 1 hr peas soup and how to may the broth. How to make the quickly or if you have more time. There are so many options for making a red sauce. It tells you if it is F for Fast, M for Make ahead or V for Vegan. It gives varieties, forms and availability of some things, like stores, markets or mail order only. It describes ingredients, too. A cool thing is how it references pages when talking about one recipe or ingredient on another so you don't have to look it up again. It gives times to make the recipes and # of servings. It's a big book 907 pages.

Other books I've enjoyed are (anything by Isa Chandra Moskowitz) VEGAN WITH A VENGEANCE and APPETITE FOR REDUCTION.
I also enjoyed making recipes from vegan restaurant Real Food Daily's owner/chef Ann Gentry--entitled REAL FOOD DAILY. It has some more involved recipes and includes a WONDERFUL recipe for "chickenish" seitan.
Happy Herbivore and the Everydayday Herbivore are my FAVORITES!!! Theres a new one hot off the press same author Happy Herbivore Abroad. Love the recipes in those books. I particularly love the Cheater Pad Thai and mushroom gravy recipes...oh and the chocolate chip bean cookies...oh hell I love them all
