Recently had a stew from Ghana, Africa that was great and had black eyed peas.

l= made by a Ghanian that came to visit us and this recipe is rather close, however he also added some squash.

Two others that I do are mustard greens, ham hock and black eyed peas with lots of garlic and onion, some chilies and liquid smoke.

My own version of a high protein irish stew, carrots, onions, turnips, celery - saute until very dark brown; add veggie "Better than Bouillion", mushrooms, pearl barley, and black eyed peas, cover with a strong stout beer and simmer for a couple of hours - at the last hour add a cup of chopped parsley, bay leaf and garlic and a some frozen peas -- to up flavor a diced apple.

Looking for recipes - I'm addicted to these all of a sudden. I've just been mixing them with corn and a bit of seasoning. Ideas?
