I agree it sounds great. Using a little tomato paste is also a good idea. Adds a little flavor

Both sound delicious, and I like the idea of a roasted fall salad that can become a sandwich the next day!

Just the other day I made a great fall salad by roasting red peppers, onions, egg plant, and mushrooms together....I used a tiny bit of tomato paste, thyme, salt, pepper and olive oil for a dressing and chilled it - I served it on butter lettuce with a dusting of goat cheese - excellent. Then the next day I made a open faced sandwich by spreading some of this on herb bread and again dusting with goat cheese and broiled it -- I'm hunger for this again!

My favorite is Panda Express' Tofu Eggplant (made with Asian eggplant). Unfortunately, their tofu is deep fried.

Eggplant has been one of my absolute favorite food this summer!

Eggplant is one of faves.
I have seasoned and baked thick slices and used them to make an eggplant sandwich or wrap.
Also use it in making spaghetti sauce and lasagna.
Always use it when making vegetarian vegetable stews.
