i posted this in another group's thread "what did you eat today," but thought that you might like it, too.
i made an awesome tunisian meal for brunch today. i visited the north african country in february and i was inspired by the clean healthy food and lean people, so i've been trying some traditional and common recipes.
i took some pix the first time i made it, it's easy and flexible. it starts with an assortment of fresh or canned vegetables, like tomatoes, peppers, onion and spinach, a little broth and low to medium heat. when the veggies are the way you like them, you open two 'holes' in the mixture and drop in some eggs. the eggs poach in the juices and you can cook them to your preferred doneness. mmmmm. i love this. i usually have about half the vegetables left, after serving the eggs with a generous portion of veg, so i put them into a bowl with some chickpeas for a little fresh 'soup' later in the day.
