1 cup shelled green almonds* 1/2 onion, finely diced 3 cloves garlic, chopped 1 potato, peeled & diced 1 Roma tomato, diced juice of 1 lemon 2 TBSP olive oil salt & pepper
Heat oil on medium heat, add potatoes and half of the onions, salt & pepper. Cook until potatoes soften. Add remaining onion, almonds, garlic and tomato. Sauté until onions are translucent. Add lemon juice and serve warm.
