I've never heard of anthing like this recipe...how was it? Did the almonds taste different green?

Oopsie-- emoticon I fixed it.

I'd never even seen green almonds, either. I had to ask the cashier what they were! You just take the green part off, as the shell hasn't developed yet.

I have never tried green almonds. They are in season right now so I guess now is the time. You did not mention when to add the almonds to your recipe.

1 cup shelled green almonds*
1/2 onion, finely diced
3 cloves garlic, chopped
1 potato, peeled & diced
1 Roma tomato, diced
juice of 1 lemon
2 TBSP olive oil
salt & pepper

Heat oil on medium heat, add potatoes and half of the onions, salt & pepper. Cook until potatoes soften. Add remaining onion, almonds, garlic and tomato. Sauté until onions are translucent. Add lemon juice and serve warm.

Serves 2-4.
