Very good tip. I too put mushrooms cut up real small in some recipes. However I think I will try the pulsing in food processor next time and see if its better. I put roasted bell peppers- all 3 colors and yellow squash and zucchini in mine today with just a 1/2pound extra lean ground beef so that he would "see" me cooking the meat.
He didn't complain so I guess it was okay.

If you miss the texture of ground beef (or just the "tooth" of its texture) in spaghetti sauce, just make your sauce with lots of mushrooms and pulse it in your food processor for a few seconds. It's terrific and has a totally different tooth than if you use chopped mushrooms at the beginning.
My husband also likes to add a tbsp or so of mascarpone cheese to the sauce to give it creaminess.
