My family has always eaten okra, but this was the first time I had ever cooked it myself. Try to find fresh okra grown locally. If you buy it imported at the grocery store it can be soft and sometimes even moldy.

I'll have to give this a try. I had a wild hair last week and got okra masala from an Indian place last week--delicious!

I'm sort of afraid of using fresh okra--any hints, RFR? emoticon

1 medium onion
2 tbs olive oil
1 can tomato sauce
1/4 cup catsup
1 tbs chili quick (if you don't have any this is just corn flour and spices to thicken)
1/4 tsp pepper
1 can diced tomatoes
1/2 tbs chili powder
3 cups sliced okra
1 tsp salt

Add the olive oil and onions to large pan, cook until soft. Add all the remaining ingredients, cover and cook until okra is soft. Stir as needed.

Once it is done it is very thick and I didn't think it had enough in it so I added a cup or water, 2 cups of cooked brown rice, 2 cups of cooked pinto beans and let it heat back to a boil. You know I can't ever follow a recipe ; )
