For those of you who eat chicken, my hubby made the "Weeknight Roast Chicken" from Cook's Illustrated Sept/Oct 2011 and it was DELISH. Again, after a little hoop jumping you can get at the recipe here:
He served it with the accompanying Tarragon Lemon Pan Sauce (it appears in the same article in the magazine, not sure how it shows up online). Honestly it's the best chicken I can remember having... including some really good marinated, grilled chicken he made for me last week. (I'm spoiled, aren't I?)
We had the chicken with one of our favorite summer dishes: confetti corn. I'll post that next.
