This sounds good. I just got two large zucchini (called courgettes over here in the UK) in our weekly food box from the CSA and I was wondering what to do with them. I'll try it this weekend. Thanks!
I have made a similar dish in the past. Instead of cutting the zuchini with a knife, I used a vegetable peeler to create thin strips then I cut the strips down if I needed.
Thanks for reminding me of this. I have some zucchini on hand.... I think I will be making this tomorrow. =)

Tis the season for folks to be giving their abundant supply of zucchini away, and I happened to remember seeing this in my latest Whole Living magazine:
I made it today, and it was really good! The garlic flavor is quite strong, so if you're not a fan, scale back on the garlic. Also, I wouldn't waste the time cutting the zucchini into long strands because it's hard to eat like that.
