Mmmm, one of my favourite meals and it was a big stepping stone in getting me to eat more veggies and embrace salads. And it always reminds me of eating it on holidays in Greece .... happy times!

Greek salads are a favorite of mine. But they do contain more fat and sodium than I would like. But a good treat once in a while for sure.

3 Tbs. extra-virgin olive oil
1 Tbs. red wine vinegar
1½ c. chopped cherry tomatoes
1 cucumber, diced
1 green bell pepper, chopped
1 red onion, chopped
1½ c. crumbled feta cheese
4 naan, wraps, pitas, or flatbread
Whisk olive oil, vinegar, salt & pepper in large bowl. Add veggies & feta cheese. Toss to
coat. Using slotted spoon, transfer salad mixture to the wraps/naan/pitas/flatbread.
