Black Bean, Roasted Corn & Avocado Salad on a bed of Red Quinoa
1 cup red quinoa, cooked with broth (chicken or vegetable & you can also use regular quinoa) 2 cups stock (chicken or vegetable) 1 - 15 oz can of black beans, drained & rinsed 2 cups roasted corn kernels (sometimes I leave this out) 1 avocado, cut into 1/2 inch pieces 1 pint grape tomato's, halved (I use whatever tomatoes I have on hand) 1/2 cup red onion, finely diced (optional) 1/2 bunch cilantro, chopped 3/4 cup Cilantro Salad Dressing (you can make homemade or I like Trader Joe's) 1/4 olive oil (I tend to use less then this) Zest of 1 lime sea salt and pepper to taste
Cook quinoa with broth. While the quinoa is cooking combine beans, corn, avocado, tomato's & onion. Add salt, pepper and lime zest to taste. Add 1/2 of the cilantro and gently toss. When quinoa is cooked, toss with olive oil, add salt & pepper to taste. When ready to serve, spread quinoa on a serving platter and top with corn and bean mixture, garnish with remaining cilantro. Serves 6.

I make a dish that's similar to a risotto (with quinoa instead of rice, obviously), using vegetable stock (preferably home-made from the juices leftover from a pepper/onion/garlic saute) and extra light olive oil. Broil a spaghetti squash (brush lightly with olive oil) for 40mins at 425. Saute (in olive oil) chopped fresh spinach, sliced fresh mushrooms, and thin slices of apple, and a sprig of fresh thyme. Mix it all together, add salt and pepper to taste.
Quantities are roughly: 1c. quinoa to whole medium spaghetti squash 2c. spinach 2 large mushrooms .5 medium apple (I like Gala)
