I had a quinoa salad once and I am still trying to recreate the recipe.... no luck yet.

But I wanted to share this recipe. Tried it for Father's day and it was really yummy..... this is my recipe

I like to make my quinoa and have it with a dollop of greek yogurt, chopped up berries, and a drizzle of yogurt. (also a bit of pumpkin pie spice on top.)

Bellatrice - that sounds yummy! Here's one -

Black Bean, Roasted Corn & Avocado Salad on a bed of Red Quinoa

1 cup red quinoa, cooked with broth (chicken or vegetable & you can also use regular quinoa)
2 cups stock (chicken or vegetable)
1 - 15 oz can of black beans, drained & rinsed
2 cups roasted corn kernels (sometimes I leave this out)
1 avocado, cut into 1/2 inch pieces
1 pint grape tomato's, halved (I use whatever tomatoes I have on hand)
1/2 cup red onion, finely diced (optional)
1/2 bunch cilantro, chopped
3/4 cup Cilantro Salad Dressing (you can make homemade or I like Trader Joe's)
1/4 olive oil (I tend to use less then this)
Zest of 1 lime
sea salt and pepper to taste

Cook quinoa with broth. While the quinoa is cooking combine beans, corn, avocado, tomato's & onion. Add salt, pepper and lime zest to taste. Add 1/2 of the cilantro and gently toss. When quinoa is cooked, toss with olive oil, add salt & pepper to taste. When ready to serve, spread quinoa on a serving platter and top with corn and bean mixture, garnish with remaining cilantro. Serves 6.

I make a dish that's similar to a risotto (with quinoa instead of rice, obviously), using vegetable stock (preferably home-made from the juices leftover from a pepper/onion/garlic saute) and extra light olive oil. Broil a spaghetti squash (brush lightly with olive oil) for 40mins at 425. Saute (in olive oil) chopped fresh spinach, sliced fresh mushrooms, and thin slices of apple, and a sprig of fresh thyme. Mix it all together, add salt and pepper to taste.

Quantities are roughly:
1c. quinoa to whole medium spaghetti squash
2c. spinach
2 large mushrooms
.5 medium apple (I like Gala)

serves 4-5

This is my favorite:

Quinoa and black bean salad

Beans, black, 2 cups
Quinoa, 2 cups
Peppers, sweet, red, fresh, 1 large
Cilantro, raw, 3 tbsp
Yellow Sweet Corn, Canned, 1 can (12 oz) yields
Scallions, raw, 4 medium (4-1/8" long)
Lime Juice, .33 cup
1.5 T red wine vinegar

It is good hot or cold. Even my kids like it, but we like anything vinegary.

Thanks. I'll have to do some experimenting. We tasted a quinoa fruit salad at a food show, and it was really good, but I have yet to find any recipe that good!

I added peas and curry powder and I thought it was delish, but maybe kids may not like that.

I find it pretty tasteless also I add it to soups and stews or oatmeal. Also good with stir fried veggies etc.

How do you make this? I've tried several different ways and never love it. It's okay, but I'd love to find a way of preparing it so my family and I will love it and have it more often.
