Giada deLaurentis had a great recipe for farro.....more like a "rice" salad....with cucumber, dried cranberries, walnuts, fresh herbs and a vinigarette. was really good!
I also just use it in place of where I would normally use rice.... It has a taste and texture like a brown rice and barley combined....so you can use it in soups too...

I haven't had the chance to cook with it yet but I've seen it mentioned in a couple recipes at 101cookbooks.com. This is the one that caught my eye but some of the others look pretty good too: http://www.101cookbooks.com/archives/baked

So, I have been into new grains lately and I bought some farro at the store. Has anyone used this? Any recipe suggestions?
