Giada deLaurentis had a great recipe for farro.....more like a "rice" salad....with cucumber, dried cranberries, walnuts, fresh herbs and a vinigarette. was really good!
I also just use it in place of where I would normally use rice.... It has a taste and texture like a brown rice and barley combined....so you can use it in soups too...
