Now that is a curry that I haven't tried making at home. On the list for sure.
I finally found coconut milk that comes without sulfites (allergic)! How awesome to finally make a safe coconut curry at home. I bet ya...curried chickpeas in the oven would make a great snack too.

Oh ok, cool. I'm sure you will enjoy it as much as I do. It's so filling. I'm eating it now for breakfast, lol.

I will have to try this for sure!! I can do without the brown sugar & bouillon, myself, and the cherry tomatoes are perfect!! I found a substitute for the Adobo Seasoning.

Adobo Seasoning 4 tablespoons salt 3 tablespoons onion powder 3 tablespoons garlic powder 3 tablespoons ground black pepper 2 tablespoons ground oregano. Put all ingredients in a jar with a tight fitting lid. Shake well and store for up to two months in a cool dry place.

Yes, you have the right recipe. I tweaked mine a little because I ditdn't use any boullion or brown sugar, I added cherry tomatoes and instead of the cumin and cardamon I used Adobo seasoning.

OMG! That meal is absolutely delicioso! A few weeks ago my cousin and I got together to make some vegetarian dishes. Allbeit, if you put them all together, they weren't exactly a cohesive meal, but nonetheless we made them. And one of the dishes that we made was Curried Chickpeas. Well I just had to find that recipe and you know what? I did! It's so simple to make and is just wonderful. For anyone interested, I found it on vegweb.com. You can look under the Indian food section or the Chickpea section. I was pleasantly delighted :-)
