I agree that I need to try different lentils. The truth is, that I thought it was much better the next day. The kids weren't crazy about it, but sometimes there is no pleasing them. Please keep posting recipes, I love to try new things. Some work for me, some don't, but I'm always happy to try.

Hmm, yeah, I used brown lentils, the red ones may not go as well in this recipe, but I've never had them so I can't say for sure. I also used diced tomatoes and your cheese sounded fine, so you might want to try brown or green lentils if you decide to try it again. I read somewhere that the red ones are more suited for soups or puree as they don't hold their shape as well.

Okay, I used red lentils. I don't know if that was a good choice. I used lowfat monterey jack cheese. Another, I don't know. I had to cook it an extra 20 minutes to get the carrots and celery soft. The seasoning was good. I'm just not sure about my ingredients. I think the lentils it called for were more 'beans' than what I used. All in all, it was good. Hubby and I enjoyed it. Of my 3 kids, 1 liked it, one veto'd and one said 'don't make it again soon, okay mommy?' I wonder if it was my mods, or they just didn't like it. I will definitely revisit it, but not soon. Don't want to freak the kiddies out...lol...

Thanks for the link and the review. Its in the oven now. I didn't have stewed tomatoes, so I used diced. I'm skipping the peppers and going heavy on the celery and carrots and adding mushrooms. We'll know in just over an hour if I made it work.

Found this one on all recipes website and its superb and very good for you! My meat loving husband liked it a lot too. It would be a good one that you can modify based on what you have available in the pantry too! I left out the sage, used fresh thyme, and added extra celery and mushrooms since I was low on bell pepper and it turned out lovely. I also used half lowfat mozarella and half cheddar. I will definitely be making it again, and it makes a bunch so you can enjoy leftovers the next day.
