OMG! These are wonderful! I've been missing muffins. The ones my DH makes have so many calories that I usually just pass them by, but these not only have whole grains and a healthy dose of yellow vegetables, they are also low enough in calories that I can eat them without guilt!
Luckily, I bought "too many" yams, so I had a lot more mashed than I needed. I've divided these up into 1 3/4 C portions and frozen them for the next time I want to make up a batch.
