The soup sound really good. I tried WW recipe for a salad today it was awesome. 2 cups mixed salad greens,sliced cucumbers,sliced carrots, chopped medium apple, 1/4 of an avacado,diced, 3 T feta cheese and 1 teaspoon each of white wine vinegar and olive oil. I did not have the vinegar so I used a fat free raspberry dressing I had on hand and this salad hit the spot.
5 Cups Water 1 (6 oz.) Package Uncle Ben's fast-cooking long grain & wild rice (CORE 1 Pt) 1 (10 oz.) Can 98% Fat Free Cream of Chicken Soup (CORE 1 Pt) 1 1/2 Cups Skim Milk 1 (8 oz.) Package Fat Free Cream Cheese, cubed 1/4 teaspoon Salt 1/2 teaspoon Pepper 1 (10 oz.) Package Frozen Broccoli, thawed and chopped small 1 (14.5 oz.) Can Sliced Carrots, drained and chopped small 1 small can mushrooms (0ptional)
In a large saucepan, combine the water and rice mix with the contents of the seasoning packet; bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add the soup, milk, cream cheese, salt and pepper; stir until cheese is melted. Add Broccoli and carrots; cook over medium-low heat for 5-6 minutes or until broccoli and rice are tender. Serves: 10 (slightly over 1 cup each)
