Here's a recipe that our family has enjoyed for years and years. I modify it for ourselves with some less butter and I use brown rice and skinless thighs or breasts. We like to use more curry powder too. Enjoy!
East Indian Chicken
1/4 c. flour
1 T. curry
1-1/2 t. salt
1/2 t. black pepper
1 (3#) chicken, cut-up
1/4 c. butter
1 large onion, thinly sliced
1 c. raisins
1 c. rice
4 chicken bouillon cubes
4 c. boiling water
Combine flour, curry powder, salt and pepper in a paper bag. Add chicken pcs. and shake well until lightly coated. Brown chicken in butter. Sprinkle onion, raisins and rice over chicken. Dissolve bouillon cubes in boiling water and add to chicken. Reduce heat, cover and simmer approx. 45 min. or until chicken is tender and rice is done. Makes 6 servings.
