Snickerdoodle Cookie Mix


These snickerdoodles are rolled in a cinnamon sugar mixture before baking. An easy mix to make and give. Or, pack into plastic bags and put into a large mug or pretty bowl.
Ingredients:

2 3/4 cups all purpose flour
1/4 tsp. salt
2 tsp. cream of tartar
1 1/2 cups sugar

Preparation:
In a large bowl, combine the ingredients with a whisk. Store the cookie mix in an airtight container or jar. Attach this recipe to the jar:

Snickerdoodles

1 cup butter or margarine, softened 2 eggs 1 package Snickerdoodle Mix 1/2 cup granulated sugar
1 tablespoon ground cinnamon

Preheat oven to 350. In a large mixing bowl with electric mixer, cream butter until light; add the eggs and beat on low speed until the mixture is smooth and well blended. Add the Snickerdoodle Mix and continue to beat on low speed until the dough begins to form. Combine the sugar and cinnamon in a small bowl. Shape the dough into 1-inch balls; roll in the cinnamon-sugar mixture. Arrange on ungreased baking sheets 2 inches apart and bake for 16 to 19 minutes, or until light tan. Transfer cookies to wire racks to cool. Originally shared on the Southern Cuisine Forum by PD105.

Vanilla Extract


Like the flavor of pure vanilla extract, but hate the pure vanilla price? Invest in three vanilla beans, and you can make enough extract to last you for years.
Difficulty: Easy
Time Required: 5 minutes to prep; 2 months to develop.
Here's How:

Use a knife to split the vanilla beans open lengthwise, stopping one inch from the end of each bean.
Place the cut beans in a glass container, and cover with vodka.
Make sure the beans are completely submerged. Push down any that aren't.
Secure the lid; and store in a cool, dark place.
Allow the extract to develop for at least two months before using, shaking at least once a week.

Tips:

To replenish your supply of extract, just add more vodka to the bottle from time to time. The original beans will retain their flavor for years.
Homemade vanilla extract makes a great gift. Package some up in small bottles, and decorate them with your own label.
Online vendors often have the best price for vanilla beans.

What You Need:

1 cup vodka
3 vanilla beans
A glass jar with a snug-fitting lid
A knife

Chicken Ramen Goulash



Forget about paying for fast food. Kath's recipe for chicken goulash will get you to the table in 10 minutes.
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes
Ingredients:

1 package chicken-flavored Ramen noodles
1 6 oz can chicken
1/2 cup celery, chopped
Canned mushrooms
Any other vegetable (corn, tomatoes, etc.)

Preparation:

1. Cook the noodles according to directions on package.

2. Add the rest of the ingredients and heat thoroughly.

3. Salt and pepper to taste.

Serves 2

Goulash

Three ingredients and 30 minutes is all it takes to make this goulash recipes submitted by mammahop:
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Ingredients:

2 lbs ground beef (lean)
4 cups elbow macaroni (whole wheat)
2 15 oz cans tomato sauce
Onion powder

Preparation:

1. Brown the ground beef. Season with onion powder, and drain.

2. Cook the macaroni until tender. Drain.

3. Put the beef and cooked macaroni in a large dutch oven pan, and pour tomato sauce on.

4. Heat up and serve.

Serves 8-12

Biscuit Popovers

Biscuit popovers are the perfect alternative to pricey party foods. Make up a batch for your next gathering.
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Ingredients:

1 can biscuit dough (or homemade biscuits).... reduced fat biscuits
Shredded cheese...... ff or rf cheese
Ham, pepperoni or your choice of filler.... like veggies

Preparation:

1. Roll the biscuits out to make flat circles.

2. Place a small amount of cheese on top of each one.

3. Add ham, pepperoni or your choice of filler.

4. Fold over and seal.

5. Bake for 12 to 15 minutes or until golden brown.

Tip: Make up a batch, and freeze them for easy breakfasts.

Greek Yogurt

In love with Greek yogurt, but not in love with the price? Here's how to make your own for a lot less coin.
Prep Time: 5 minutes
Total Time: 5 minutes
Ingredients:

Plain yogurt

Preparation:

1. Line a strainer with a double layer of cheesecloth, and place over a bowl.

2. Pour a container of plain yogurt into the strainer.

3. Cover and refrigerate for three hours.

4. Check to see if the yogurt has reached your desired thickness. If not, stick it back in for another hour.

5. Serve with honey, fruit, nuts or any other toppings that you like.

Tip:

1. If you don't have cheesecloth, you can use a coffee filter or an old (but clean) pillowcase instead.

2. Save the whey that drains from your yogurt (it's full of good-for-you nutrients), and use it in place of the liquids in baked goods recipes.

3. If your yogurt ends up thicker than you want it, just add some of the whey back.

Instant Oatmeal


3 cups Quick-Cooking Oats
Salt
8 Small sized Zip Baggies


Put 1/2 cup oats in a blender and blend on high until powdery. Set aside in a small bowl, and repeat procedure with an additional 1/2 cup oats. If you're using a food processor, you can do the 1 cup of oats in one batch. Put the following ingredients into each zip baggie: 1/4 cup un-powdered oats, 2 Tbsp. powdered oats, and 1/8 tsp. salt. Store in an airtight container.


To Use:
Empty packet into a bowl. Add 3/4 cup boiling water. Stir and let stand for 2 minutes. For thicker oatmeal, use less water - for thinner oatmeal, use more water.


Variations:


Apple-Cinnamon Oatmeal- To each packet add 1 Tbsp. sugar, 1/4 tsp. cinnamon, and 2 Tbsp. chopped dried apples.


Sweetened Oatmeal- To each packet add 1 Tbsp. sugar


Brown Sugar/Cinnamon Oatmeal- To each packet add 1 Tbsp. brown sugar & 1/4 tsp. cinnamon


Oatmeal w/Raisins & Brown Sugar- To each packet add 1 Tbsp. packed brown sugar and 1 Tbsp. raisins.
