I would do some eggplant but Kris doesn't like that so that leaves me with purple grapes and I get bored with those. Not a fan of blueberries or blackberries. I should try to be a bit more creative I guess.

Yeah, the blue/purple is tough.
I eat blueberries a lot. Purple grapes, blackberries and eggplant also fall in the blue/purple.
There just arent'a whole lot of blue/purple fruits and veggies! LOL

Don't score me, I'm not posting every day but my computer.....well, you know. But I am eating my rainbow every day and today I went to the store and got me some nice RED strawberries, GREEN and PURPLE grapes, and YELLOW bananas and I eat my WHITE onions and potatoes every day. Just wanted you to know I'm doing, just not posting.

Okay, I don't know how I managed to lose track of this thread. Evidently I unsubscribed from it accidentally or something.
I just wanted to let y'all know that I have been eating my rainbow every day, just haven't been here to post it.
Along the way, I came up with a recipe that I really love that will get all of your rainbow in one dish. I'll have to work it our on the SparkRecipes.com nutrition calculator and make it a shared recipe.
Briefly, you cook your favorite whole wheat pasta, according to package directions. Pour about a teaspoon of EVOO into a heavy skillet. In the oil, saute chopped onion (white veggie), chopped green bell pepper (green veggie), yellow bell pepper (yellow/orange veggie), and minced or pressed garlic (white again).
Peel and chop about 2 cups of eggplant (blue/purple veggie) and add to the sauteed veggies in the skillet. Drain and rinse a can of navy or Great Northern beans (white again!). Pour them into the skillet and stir in. Open a can of petite diced tomatoes or diced tomatoes with green chiles (red veggie) DO NOT DRAIN, and pour into the skillet. Clean and slice about 6 to 8 mushroooms (white veggie) and, yup...throw 'em in the skillet.
By now your pasta should be cooked. Drain the pasta, but do not rinse it, and pour it into the skillet. Season to taste with your choise of herbs and spices (I used oregano, thyme, rosemary, and fresh ground black pepper). Cover the top with a package of fresh spinach, chopped up a little bit before adding (lots o' green veggie). Stir the whole thing up, and let it simmer for about 10 to 15 minutes.
I served it as a side dish because I knew DH would be "iffy" about eating it, but really, it could be a meal by itself. It made a huge skillet full, so I've had 3 meals off of it, not counting the night I served it as a side.

Shoot guys, I'm about ashamed to even come here! LOL I'm sorry, I am eating my rainbow, my computer is just too slow to post every day.
I keep broccoli and green beans for my green I have both grapes and grape juice for my purples I have oranges and tangerines for my orange I'm an onion lover so that covers my whites Yellow is another story, sometimes it's bananas and sometimes it's yellow squash.
You guys are rocking this place for sure! I'm proud of all of you.

3/4 - I had a menu all planned out with something from each color group but got side-tracked and didn’t stick to the plan. I always say “oh I’ve had this fruit and that veggie so I’m ok”. It’s interesting to see how many fruits/veggies/color groups I’ve actually left out. I never realized it until I just typed it out there right in front of me.
