I make those all the time NJSHAR :o) I bake mine though. And sometimes just putting leftovers in them with cheese the kids go crazy!

Last night I had sirloin steak. I buy pre-packages small (4 oz) steaks- they thaw quick.

Last night I was in a timecrunch, since I had an appointment around dinnertime, so I did something quickly and threw it into the crockpot.

I browned ground beef in the crockpot - about a pound a half. Added taco seasoning, chopped onion and a jar of chunky salsa to the meat.

I stuffed the meat into 4 large peppers that I removed the tops & seeds. Put all into the crockpot on high. Put some cheddar cheese on top of each. Left the food for about 4 hours and voila - tasty stuffed pepers! My husband was in love with them. I gave one to my mom to-go, since she was watching the girls for me, while my husband and I ran out.

Yummy eggplant parm. Dipped eggplant slices in egg, then grated parmesan cheese, then put on baking sheet in oven until brown, then assembled with part skim mozz and sparing amounts of tomato sauce. Served with green salad.

The low carb beef and green bean casserole sounds nice! Will google it.

Had low carb chicken pizzaiola. Not as good as I'd hoped it would be. Used frozen chicken breast & maybe that's why it was a bit rubbery. Had it with green salad. Sauce was good.

Mmmm - BLT salads. Made a huge salad for each of us, with lots of crispy romaine, some mixed veggies (broccoli florettes, shaved broccoli and cabbage), half a tomato, onion, some walnuts, and BACON! I used a light caesar dressing sparingly.

Loved it!

Off to yoga, then to my grandparents house to help get grandma changed & into bed. Glad the home health aide starts tomorrow and hoping it works out, so my mom and I can have some free time.

Homemade low carb meatballs - ground beef, 1 slice per person of Pepperidge Farm low carb bread cubed, salt, pepper, 1 beaten egg, 1 onion, garlic. Sauteed in olive oil, until cooked, then added a small amount of tomato sauce on each meatball, with some shredded part-skim mozzarella, then put the skillet under the broiler for a minute to melt the cheese.

Ate the meatball parm, with some mixed vegetables (mostly broccoli).

Yum!

Low carb slowcooker chicken cordon bleu.

My review: Not bad. Chicken was tender, but, for me, the cheese kind of seeped out. If I made it again, I'd probably put in more cheese to allow for that. I used the Kraft 2% fat Swiss cheese.

Ballet night is always a slowcooker thing - too hectic otherwise.

Crockpot london broil tonight - came out great. It remained a dubious gelatinous color for over half the cooking time and I was worried.

By dinner time, it was tender, moist and delicious. I normally am not a fan of london broil, but this was nice!

Tonight was a quick dinner, since my daughter had a birthday party. I made turkey burgers - I had mine with a little light mayo, a dab of ketchup, and some chopped onions sandwiched between some hardy romaine leaves, as opposed to bread. My husband had his on a wrap. I served it with broccoli slaw - it was the bagged mix, and I added red wine vinegar, mayo, salt & pepper to it. Yum!

My picky daughter had mac & cheese and the non-picky one had a hot dog, with broccoli slaw and some mac & cheese.

And, I did turn down pizza today at my daughter's friend's bday party. The cupcakes were those store-bought monstrosities with the lump of over-sweet icing on them, so they were not so hard to pass by. Plus, I was hanging with my skinny neighbor, so that helped, since she eats nothing.

I don't feel badly about eating that yesterday. I never eat at Red Lobster and I make breakfast, lunch & dinner 6 nights a week for me and my kids (husband only eats dinner at home during the week). It was my birthday, that was what I wanted to eat and I ate it. Today, I'm back to low-carbing, as I have been doing since 9/9.

Oh! No!! NJSHAR!!!
That is one of the worst meals you can do that with.
I know because that is what I used to do once a month!
Now I ask for 2 shrimp scampi instead of the 4 breaded shrimp. Get rid of the croutons. Don't eat the biscuits. Ask for veggie. It is now 2 meals for me! I take half home!

Woubbie - is coconut carb-friendly? The oil and the meat of it? Never looked into it. Can't think of the last time I had coconut, but when I worked in NYC and lived in Jersey City, they used to have an outdoor Italian ice vendor who made the most amazing, mouthwatering coconut Italian ice.

I ate terribly today, for my birthday dinner. And, my stomach hurts. I had broiled lobster with butter, shrimp scampi, and 4 fried/breaded shrimp for dinner. I had a caesar salad. I ate the croutons and I ate 3 dinner rolls. I also had a slice of my birthday cake. Oh well, tomorrow is a new day. I am usually 100% on plan and I decided to let it slide a bit for my bday. On a happy note, I did not eat any of my kids' fries, or any unfinished food from their plates.

Bought a roast chicken from the local grocery - had most of the skin and some of the thigh meat. Another big salad. Bought coconut oil again (I've been out of it for a couple of months) and mixed that with some shredded coconut for desert. Water. Really gotta do some cooking this weekend!

Nice! Anybody cooking tonight (Friday)?

Last night I made BLTs, with fresh tomatoes from our backyard garden, on low carb wraps, with a big green salad.

Tonight, we are going out - yesterday was my birthday. My mom was supposed to watch the kids tonight, but bailed, so going somewhere kid-friendly, I guess. I'm dying for seafood.

Two Wendy's deluxe junior cheeseburgers, sans bun. Another band night. DH working evenings is really screwing with our schedules, and he doesn't tell me until late in the day that he doesn't have time to make dinner. Crockpot next week, at least on Tuesday and Thursday. I really HATE most fast food now. When you take the buns off you can really taste how gross it really is.

Just wondering if we can all post, since it's inspiring to hear others' ideas for meal planning.

Tonight I had parmesan crusted chicken (butterflied chicken, dipped in egg, dredged in parmesan/salt/pepper/garlic powder), sauteed in olive oil. For a side we had spinach with salt & pepper, also cooked in a bit of olive oil.

My girls are picky eaters, so they had brown rice, some of the chicken and carrot sticks.
