I don't have a good answer about how consistency changes. Given the large number of free online recipes with nut and coconut flours maybe it would be easier to use new, but similar recipes rather than trying to convert?
Hope you can find your favorites. If not feel free to post soy recipes that you hope to transfer. We could even start a section for substitution recipes. emoticon
I love experimenting with stuff like that.

I was worried about consistency. :o) or if the substitute flour needed to be more/less.
I have an old George Stella cookbook- he used to use a lot of soy.

ANY flour not soy-based! ack

I have a book listing lots of good recipes for coconut flour. I also second the recommendation for nut flours. Very simple!

Any nut flour should work. Just grind the nuts in the food processor. They are also available online.
