I used peach since you recommended it in an earlier post (I think it was you anyway). I'm thinking about trying orange jell-o with the coconut cream and some pineapple extract to make it taste sort of like a pina colada. Could be interesting.

Wanted to say that I tried the cheesecake mousse recipe with coconut cream instead of regular dairy cream, and it turned out good. A slightly different taste to it, but still very good!

Not sure what I'll replace the splenda with. I'm finding I don't need things quite so sweet anymore. I find heavy cream to be very sweet. Wonder what it would taste like without any sugar? Hmmm.

Well, since you're looking for a really good cheesecake recipe, here's my all time favorite LC dessert. It's rich and so delicious, better than most cheesecakes I've ever had. Go to this link and scroll down about halfway or so and look for the French Silk Chocolate Pie. I usually substitute 1/2 the butter for 4 oz. of cream cheese to make it taste a little more like cheesecake, but it is fabulous either way. I also don't use Splenda (substitute 1/3 c. + 1.5 T. Truvia) but if you like Splenda it should be OK.

I'm going to keep making this too.

I was almost ready to pay anything for a LC "cheesecake" low enough in carbs!! I used to pay an arm and a leg for one from Dr Atkins in the 1990s. I found a similar "Atkins SF" cheesecake online- but for $35.00 + shipping and all of the crazy ingredients I wonder if I should ingest! Not worth it! This is just as good! If not better!

Thank you, Eliz. I made this yesterday with Black Cherry jell-o. It's smooth and creamy, much better than other jell-o/cream cheese recipes I have tried. Yum! I will be making this again. Probably a good fat fast recipe too.

I'm gonna have to try it - maybe in raspberry? I haven't done it with cream before either. (Although I have tried cream cheese with the cheesecake flavored sugar free pudding! Yum :) )

I am not a fruity person when it comes to things like sugar free jello. But I like peaches, so I made it with peach jello- it was delicious!! YUM! I ate some before it firmed, and tomorrow I'll see how it is firm. But the flavor is great! I used all high fat cream and cream cheese. Maybe it was the cream that makes this taste so good.

I tried cream cheese with sugar free choc pudding once and I wasn't too crazy about that. Maybe the cream is the secret?! I'll have to try that one with cream too!
