I used to love pizza!! Here is a great way to soothe that pizza craving. You will need a non-stick frying pan with a cover, a few tablespoons of pizza sauce, your favorite pizza toppings (I usually use mini pepperoni, chopped bell pepper, onion, mushroom), shredded cheese, and some eggbeaters or beaten eggs. Heat the frying pan to medium-high and fry up your toppings until they are sizzling (excluding the cheese and pizza sauce). The oil from the pepperoni is great for frying the other ingredients. Spread the toppings evenly on the bottom of the pan. Gently drizzle the beaten egg over the top of the other ingredients without displacing them until the bottom of the pan is barely coated with the egg. Do not stir! Let this fry on medium high for about 20 seconds (until the bottom gets slightly golden) and then cover the pan and reduce heat to medium low. The steam from being covered will finish the cooking and a glass lid works best so you can see when it's firming up. You should be able to shake the pan gently and see the whole thing loosen from the bottom of the pan. At this point, sprinkle your shredded cheese over the top. Re-cover. When the cheese is melted, drizzle the pizza sauce on top. Re-cover until the pizza sauce is warmed. Cut into 6 pizza slices with a stiff spatula and enjoy!
