Carpendar Fat Fast Bread

4 cups shredded coconut
3/4 cup flax seed meal
1 TBS xanthan
1 tsp erythritol or sweetener to equal 1 tsp
1.5 tsp baking soda
1/2 tsp salt
1/2 cup water
2 TBS cider vinegar
4 eggs

Preheat to 350, grease nonstick loaf pan 8x4
in food processor with S blade combine all dry ingredients. process until fine meal.
while running drop each egg in food chute until incorporated
Then do the same for the water and vinegar.
Keep scraping the whole time.
Put in pan and bake 1 hr 15 min

I've posted several book reviews...I know some are in Wheat Belly, and I don't recall which low-carb forum others are in. Might be here, I can't remember! lol

In any case, there's a book on cooking with coconut flour which has recipes which are developed for (not adapted to) coconut flour. Lots of yummy-looking things there!

Look for the reviews. The ISBN is attached, so you should be able to find a copy quickly through any bookseller searchable by that data.

I know gf isn't low carb i was just putting out there what flours I have on hand. im hoping someone has a recipe that calls for one i already have so i can make some today. I have a son who has celiac and is on a glutenfree diet thus the gf flour and almond flour :). I also have one with pku on a low pro diet thus most of the other flours I have on hand. Needless to say I tend to have a variety of flours in my pantry.

I don't eat bread any more, just not worth the work for me I guess, but would say stay with almond (or other nut flours) and coconut flour only for low-carb. Gluten-free is NOT low carb. Take a look at this website for recipes:

I am looking for a good bread recipe that is not too dense but more on the light side. I have these flours on hand:

Coconut flour
Almond flour
Soy flour
Potato flour
rice flour
Brown rice flour
sweet rice flour
flaxseed meal
tapioca flour
vital wheat gluten, wheat germ, and wheat starch
sorgham flour
and all purpose gluten free flour

I would prefer for the recipe to use what i have on hand if possible. Thanks!!!
