If you just do a search on Vietnamese recipes you can find what goes into their various dishes. Seems like you could order any type of meat/veggie stir-fry and hold the rice or noodles. Here is a website I came across. Get their carry-out menu and compare. If there is something they usually include like flour, sugar, just tell them to hold it out...

Anyone know what I should order at a Vietnamese restaurant that would be low carb? I'm thinking that I'll try and get them to cook some meat and veggies for me and have a salad. But, seems like much of what's on the menu has rice and or noodles in it, not to mention sugar.
