We now have a set of threads in the Low Carb Recipes forum for breakfast, lunch and supper menus. And a set of breakfast and lunch threads in the Main forum. And another thread in the Main forum called "Just Wondering" that some people are using to post their menus. Enough already!

Let's close out the menu threads here in the recipe section, and everyone post on the threads in the main forum. Russell, will you start the snack and dinner threads there? Obviously, you can all post wherever you want to, but enough people have said that they wouldn't/didn't look in the recipes forum for menu ideas to make it seem reasonable to move them to where more people will see them.

I've tried putting my food in that tracker, but I guess I just can't figure out how to use it right. I tried to put a simple burger w/no bun in there and it took me quite a while to figure out how! cause the ones I was seeing in their drop downs all had buns. I think I finally had to enter it as beef or something, but still couldn't put the # of lbs of it I ate. I mostly just write them down in a food/exercise journal each day to track my carbs.

Yes, I know your are right, BudgetMaw, I think I am retaining a bit of water cause I noticed my feet/ankles were a tiny bit swollen yesterday. I'm still trying to get up to 64oz of water a day, but I'm close! I also count the Crystal Lite and tea that I drink. I try to stay away from diet Pepsi even though there are no carbs, but will allow myself one..once in awhile. I think my sodium was up a bit too. Plus, I know that muscle weighs more than fat and my trainer told me today not to worry about the gain. And, yes, I've noticed I haven't been as 'regular' either. Only change is that I am now going off my BP pills, because I stopped smoking last June and I don't need them anymore. Yea! Anyway, I had started back to LC back in late october, but wasn't seriously focused on it, due to the Holidays coming up. I was 155 then. After the holidays, i was up to 167!! Of course, most of that was too much salt from the ham and i bloated up bad! The rest was from a sweet and/or the mashed potatoes. Anyway, I lost 4 of it in a week. On 1/19/13, I was down to 161 and last week, I was down to 158. I've even tried cutting out my favs..SF Russell Stover candies..only 1 Carb for 3 (that's taking the sugar alcohol & fiber off). Cause I thought that maybe the Sugar Alcohol would be the problem. Time will tell on that one cause it hasn't been a week yet since I've stopped eating 3 a day. I keep my daily carb count as close to 20 as I can get. Here lately, I get busy with something and I forget to eat!! lol So I eat less carbs than that.

No worries though! I am NOT a quitter! I will keep doing what i'm doing and trying to learn what my body can or can't eat, step up my exercise & cardio, drink more water, etc. I feel better physically because of the workouts. I'm really loving it! lol I think I haven't been losing any inches because I haven't been getting my cardio up enough. Hence, my telling my trainer to step thing up! He did today and I did sweat! I told him to be like those trainers on "The Biggest Loser" show!! lol I may regret that though!!

I was a bit depressed this morning because of the gain and the no inches lost thing, but I am far from giving up! Thanks for the info and the "push" to hang in there, BudgetMaw!! Even at 160, its still 7 lbs down and its STILL only 15 lbs from my goal...and that's very doable!! lol
Although, if (no, WHEN) I get that far, I will go for 6 more, just for grins!!!

Lady, do you use the nutrition tracker to track your food? If so and you make it public, we can take a look at it and see if we can see what might be going on. Or, if you don't want to make it public (and I only make mine public when I'm doing a low carb Food Stamps Challenge), you could share it only with a few friends to get their feedback.

Other than that, just remember that your weight will fluctuate for any number of reasons, most of them having to do with water retention. The time of month (darn those hormones!) and whether you've had more or less sodium than usual are the usual suspects there. Also, how much solid waste you've got in you - has it been longer than usual since you had a bowel movement? Did you eat more yesterday than usual that hasn't made it out yet, regardless of how many carbs or calories? Is there any change in medications, including OTC? Are you getting sick or getting over being sick? And so on.

I know how discouraging it is to not lose weight when you think you should have. And to gain a couple of pounds instead!!! But two weigh-ins aren't enough to tell you anything. It takes more before you can say that there is any kind of a trend going on.

As for not losing inches, I don't know what to say about that except that you're probably healthier for the exercise even if the inches aren't coming off!

I got up late and have to go to the gym. So, I won't get breakfast this morning. I like the MIM idea. Maybe I'll try that tomorrow. Bacon and cheddar eggs are what I usually enjoy. Today was my weigh in day and I'm a bit depressed. I haven't lost any weight since last Wed and actually have gained back 2 lbs. Nor have I lost any inches yet and I've been going to the gym for almost 2 months! Not sure what I'm doing wrong! But, I refuse to give up! Eventually, something has to give!!! LOL Hope you all have a wonderful day!

Making french toast from a MIM sounds like a good idea, Sunryse. I'll have to try that sometime.

Today I'm having just a plain old ordinary MIM with butter and splenda on it. And a cup of tea with splenda and gelatin.

Some of my favorite breakfasts include the OMM that Budgetmaw mentioned above but I use 2 teaspoons of cinnamon when I make mine. I'll usually eat half and save half for another day. I eat it like cereal broken up in a bowl with almond milk and splenda. I make it in a square dish, cut it in half crosswise and make french toast using 1 egg and a splash of almond milk, fried in butter with SF syrup over it (one of my favorite breakfasts). I've left out the cinnamon, cut it in half crosswise, toasted it and had an over easy egg on top.

Bacon and cheese omelets are my died and gone to heaven breakfast. Always loved bacon and cheese omelets and eating low carb I can eat them every day.

Right now I'm playing around with breakfast smoothies but so far haven't found anything that's satisfying but hopefully one of these days I'll find the right recipe.

One of my favorites is a 5 duck egg omelett and lots of bacon with some leafy green veggies and/or mushrooms fried into it.
Since I'm off dairy I can't have yogurt any more but tried coconut yogurt today, not bad at all, only a tiny bit higher in carbs. I add 1/2 cup of berries and some ground nuts.

That sounds good Moxie. I will have to give it a try. I ran out of flax and need to get some more.

I had about 6 egg whites and two small pieces of bacon. I also always have at least 2 cups of coffee with 2 T of heavy cream in each.

Kitty, Can you freeze the leftover muffins? I'm assuming that recipe makes a whole muffin tin full and I can only eat one or two. lol How long will the others keep in the refrigerator and how would I wrap them? and, if I can freeze some, would I just let them thaw out, then throw them in the microwave for a bit or the oven to heat them up? Tks! I love the recipe and might throw in bacon instead of the sausage now and then.

I started making something I made up called "Flax Custard". I miss oatmeal and this is doing it for me although I still tend to eat bacon and eggs for breakfast with cauliflower hash. Sometimes I do eggs and pepper jack or feta with onions and peppers.

I scramble 1 egg in a small COLD sauce pan, add 2 TB cream, 1/4 cup ricotta and then heat it until thickened add in 2 TB ground flax and cinnamon to taste. I drizzle with Walden Farms maple syrup.

this morning I had scrambled eggs with onions, peppers and bacon bits in it. but, here's a good recipe for a similar breakfast food that is quick and easy for those who are on the run.

Breakfast casserole or muffins
ingredients: 12-16 oz of breakfast sausage or sausage of your choice
one sweet pepper
one onion
one hot pepper or to taste if desired
12 eggs
one pound of shredded cheese of your choice to go with your ingredients. Cheddar or colby with hot pepper, swiss or american with simple breakfast flavors perhaps

chop one onion, enough for 6 servings. depends on how much you like onion whether you use a large one or a small one.
Chop an equal amount of sweet pepper. combination of green and red is especially pretty.

Fry and scramble the sausage til it's well cooked and chopped into small bits. About half way through add the chopped veggies. cook well, til the onion is translucent and sausage is cooked through. it's ok if the sausage or veg brown, just so everything is cooked. Do not drain. allow to cool a bit while you turn on the oven to 350 F.

put the eggs into a bowl, mix a bit to break the yolks and stir in the cheese. add the sausage mixture. including any liquids.

Get out a muffin tin and ladle the mixture evenly into the 12 cups, or you can cook this in a 9x12 baking pan. place in the oven til a Butter knife pushed down half way between the center and the edge comes out clean. About 20 minutes for the muffins, about 30-45 minutes for the Cassarole. They will continue to cook after they're removed from the oven so you don't have to have the center cooked completely before removing from the oven.

cut the 9x12 baking pan 12 pieces, two cuts long ways and three across. place pieces on serving platter and serve breakfast or cool completely and store covered or in a bread bag, in the fridge or freezer. these may be removed as desired and warmed in the microwave for a few seconds to feed you all week on your way to work.

the fat from the sausage helps to keep these from sticking to the pan and keeps you full longer, but will not give you a lot of grease on the outside. but you will need to take a napkin. LOL

this may sound like a long recipe but it's really about 10 minutes to fix, and no more than an hour from start to finish. most of which you'll spend doing something else while it bakes.

tip, it's even easier if you buy a bag of chopped frozen onions and peppers, and a bag of shredded cheese from the store. EASY!! and yummy and satisfying

This morning I had a MIM, also known as an OMM, also known as a Muffin in a Minute, also known as a One Minute Muffin. I haven't seen much about them lately, so I'll give the recipe, too.

MUFFIN IN A MINUTE/ONE MINUTE MUFFIN/MIM/OMM

2 T flax meal
1-2 T cinnamon (yes, that's tablespoons!)
1/2 t baking powder
1 - 2 packets of splenda, or comparable sweetness
1 egg
1 T butter, soft but not melted

Thoroughly combine the dry ingredients in a small microwavable bowl. A cereal bowl works great. Add the wet ingredients and mix well. Be sure the egg is thoroughly mixed in. Nuke for 1 minute on high.

Now you can do several things with it. You can just eat it as is. You can take it out of the bowl, slice it in half, and toast it in under the broiler (a toaster oven works great for this), then slather with butter. You can toast it and then put some thinly sliced cheese on it and slide it back under the broiler until the cheese melts. You can pour some cream or coconut milk over it and eat it like hot cereal. You can cut it in half and use it to make sandwiches.

If you're looking for something sweet, use more sweetner and 2 tablespoons of cinnamon. For something savory, like to put cheese on or for a sandwich, use 1 tablespoon of cinnamon and less sweetner. You can use bacon grease instead of butter, which is good if you're going to put cheese on it. Someone said they added about 1/4 cup of cooked pumpkin and some pumpkin pie spice. It's really very versatile.

The purpose of the threads is to share ideas, not to judge what others are eating. Remember that there are several different low carb plans on this team, and not everything that people are eating will be appropriate for where you are on your plan.
