made up another batch of these yummy treats..
and made a few minor adjustment.
First don't OVERBEAT THe Creams cheese egge mixture.. just until it comes together and isn't lumpy
Second.. I cut the cooking time down to 12-13 mintes.. came out much better... the last batch I over browned the bottoms.. but I was still able to gooble them down..hehehe..

did some online searching and here was a suggestion.. will have to keep this in mind as I try different things

One carb per muffin seems too good to be true, but it is true. These are a terrific breakfast muffin and can be tweaked for a variety of flavors. During induction, use DaVinci syrups in a variety of flavors for a delicious change of pace.

Here are a few examples for adding variety to the Atkins muffins:

¼ c. coconut DaVinci and 1 tsp. coconut extract

¼ c. coconut DaVinci with 1 tsp. pineapple extract (tastes like Pina Colada)

¼ c. Hazelnut DaVinci with a sprinkle of cinnamon

¼ c. Eggnog DaVinci with a sprinkle of nutmeg on top before baking (This is wonderful for Thanksgiving or the Christmas Holidays.)

Once induction is over, this recipe can be adapted to OWL (ongoing weight loss). Here is one variation for after induction:

Atkins Pumpkin Cheesecake Muffins

2 (8 oz.) of cream cheese
1 can pumpkin
1/4 c. granulated Splenda or 1 tsp. Fiberfit (liquid Splenda)
1/4 c. Davinci praline or hazelnut syrup
1/4 c. sour cream
3 eggs
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves

So glad you like them, Nurserc1! I've tried the toasted marshmallow davinci in them, and it's delicious!! I want to try mixing natural Peanut Butter in, but haven't yet!

Brisar... you were so RIGHT.. refrigeration overnight MAKES a HUGE difference...emoticon

I had to try one last night and it was ok and would have been happy with those.. but this morning.I couldn't wait to later to try it so
took one ..WOW... I will be making these weekly for sure... If anyone tries using the different flavors of DaVinci.. please share your results

I can remember when I used sour cream and egg whites whipped to make the cheese cake fluffy. I also used pecan crust with cinnamon. It was an awesome recipe that I created.

2 Carb Cheesecake Cups


Nutritional Info
Fat: 14.4g
Carbohydrates: 1.8g
Calories: 149.0
Protein: 4.0g
Net Carb 2.0g

Ingredients2 - 8oz packages of softened cream cheese
1/4 cup splenda
1/2 tsp vanilla
2 eggs

ps... can use DaVinci syrups in place of splenda to chg up the taste
Directions
Preheat oven to 350
line a cupcake pan of 12 with paper liners
Soften cream cheese about 30 seconds in the microwave. Add the rest of the ingredients. Beat with mixer until smooth. Pour the batter into 12 muffin tins that have been sprayed with a non-stick spray.
***** Muffin papers sprayed with non-stick spray can also be used for easy removal.

Bake at 350 for 15- 20 minutes. CHECK to be sure they aren't over baking.....

REFRIGERATE OVERNIGHT FOR BEST RESULTS

Carb Count: (if using granulated splenda)

Total Recipe: 26 carbs

Per Muffin: 2 carbs


Carb Count: (if using DaVinci and Fiberfit)

Total Recipe: 14 carbs

Per Muffin: 1 carb---- WOWCarb Count: (if using DaVinci and Fiberfit)

Ok sure.. will post under recipes... they are a little eggie right now

Brisa are these the right amounts.. somehow I was thinking it needed more cream cheese ?????

and will do as you suggest inot the Frig over night. That is if I can keep my grubby mitts off of them.. hehehehe

I wouldn't put the sugar free jam on them, if it were me, but if you are on a more lenient low carb diet, then go right ahead!

I usually sprinkle with cinnamon and splenda.

i have been searching and finally found it..
I quick as a bunny mixed up a batch of 12 and they are in the Oven now..

Question ? can you put a drop of sugar free jam on top or not ?

This is my first CHEESCAKE experience so I am a novice
