I happen to live in New Zealand and have never heard of Carbquick! So, what is it? I may be able to track some down if I know what it is. Thanks!

What is carbquick and where can you find it? Is it like Atkins bake mix? I don't even know where to find that. Can someone point me in the right direction :)

Ohh I just bought a box of the carbquick and haven't used it yet and this sounds yummy!

Impossible Coconut Pie


1/2 cup Carbquick
2 cups coconut milk (My can had 1.75 cups so I topped up with water)
1 cup flaked unsweetened coconut
3/4 cup equivalent of sweetener (I use industrial strength liquid splenda)
1/4 cup butter, melted
1 1/2 tsp vanilla (I used 1 tsp vanilla and 1/2 tsp coconut flavouring)
4 eggs

Preheat the oven to 350 degrees. Combine all the ingredients in a bowl and pour into a greased 9 pie dish.



Bake for 50 - 55 minutes until the top is golden brown. Chill and serve cold.
