Thanks for the great replies to yesterdays challenge. I am going to check out those recipes. I failed on yesterdays challenge because it was just my daughter and myself, so I just made scrambled eggs for dinner and we were out and about the rest of the time. So boooo to me.

I don't use goat cheese (actually never tried it) so I substituted Monterey Jack cheese. I also used zucchini instead of broccoli because I have plenty of it. I had to bake them for 27 minutes instead of the 15 stated in recipe. They are delicious.

This is always a challenge for me. I love cooking. I love cooking healthy meals - I don't even mind that it takes longer to chop everything up and/or prepare it. But when I bring it to the table, it's not always so well received. Mr. Bombshelly doesn't like anything with cheese or mushrooms, so BOOO to him. The 3 little Bombshelly's don't like anything spicy, are very narrow-minded in their acceptance of vegetables, and getting 2 of them to try new things is like an Olympic Sport. Youngest is allergic to shellfish, tree nuts, peanuts, peas, and can only have eggs 'in' things, as opposed to having them be the main ingredient, like quiche or an omlette.

Nevertheless - I press on.

We subscribe to a weekly service where we get a bag of fresh groceries from local farmers. Every week, I'm making something new from their e-mails or my own brain.

Tonight I have: a huge boneless/skinless chicken breast. I plan to stir fry that with some cabbage and onions from last night. Will do that in some sesame oil (probably about 2 teaspoons). Add cabbage, shredded carrot, water chestnuts and serve with rice noodles and some frozen egg rolls from Aldi's. I don't eat these, but Mr. Bombshelly and the 9 year old like them.

BOMBSHELLY - I am so glad this felt good. Way to go on doing the Challenge!

LADYBUGSMOM35 - From my experience, I have to make my head/neck area relax while doing this stretching exercise and others like it. I tend to hold everything in my neck. So maybe if you make a conscious effort to relax that area it might work.
