I just found an awesome recipe for a healthy tiramisu:

Ingredients
• 2/3 cup(s) hot water
• 2 tablespoon(s) brandy
• 1 tablespoon(s) instant espresso powder
• 1 tablespoon(s) sugar
• 1/4 cup(s) sugar
• 1/4 cup(s) whipping cream
• 1 box(es) (8-ounce) reduced-fat cream cheese, softened
• 1/4 cup(s) low-fat (1 percent) milk
• 1/2 teaspoon(s) vanilla extract
• 4 ounce(s) sponge-type ladyfingers (30 halves)
• 1 tablespoon(s) cocoa powder

Directions
1.In small bowl, stir together hot water, brandy, espresso powder, and 1 tablespoon sugar until sugar dissolves.
2.In medium bowl, with mixer on medium speed, beat cream until soft peaks form when beaters are lifted.
3.In large bowl, with mixer on medium-high speed, beat cream cheese and 1/4 cup sugar until fluffy, about 4 minutes. Continue beating; add milk and vanilla in slow, steady stream. Beat until well mixed and fluffy, about 2 minutes.
4.With spatula, gently fold whipped cream into cream cheese mixture.
5.In 8- by 8-inch baking dish, arrange half of ladyfingers, flat sides up, in single layer. Pour half of brandy mixture evenly over; let stand until absorbed.
6.Spread half of cream cheese mixture evenly over ladyfingers. Top with remaining ladyfingers, flat sides up. Brush remaining brandy mixture over ladyfingers, allowing liquid to be absorbed before each addition. Spread evenly with remaining cream cheese mixture.
7.Sift cocoa powder evenly on top. Cover with plastic wrap and refrigerate at least 4 hours or overnight. Garnish with chocolate curls, if desired.

Rhubarb Cake

Tips

This is nice served as is, or served with a scoop of ice-cream.


Ingredients

1+1/3 cup flour
3/4 cup sugar
3 tsp baking powder
1/4 tsp salt
1/4 cup butter
1 egg
3/4 cup milk
1 tsp vanilla
--------------------------------------
1.5 cups diced rhubarb
3 tsp granulated sugar
--------------------------------------
1/4 cup flour
6 tsp sugar
2 tablespoons butter



Directions

1) Preheat the oven to 350 'F. Spray a 9 inch round cake pan with cooking spray. Set aside.
2) In a large bowl, combine from the first list, the flour, sugar, baking powder, and salt. Cut in the butter using a pastry cutter.
3) In a smaller bowl, combine the egg, milk and vanilla.
4) Mix the milk mixture into the flour mixture. Stir just until blended.
Place the cake mixture into the prepared pan.
5) Mix the diced rhubarb with the 3 tsp sugar. Sprinkle on top of the cake batter. Swirl carefully into the batter.
6) In a medium sized bowl, mix the flour and sugar. Cut in the butter, and mix with a pastry cutter until crumbly.
7) Sprinkle the crumbs evenly on top of the cake.
8) Bake the cake at 350 'F for about 50 minutes, or until it is done when checked with a pick. (no batter should be on the pick.)
9) Carefully remove from the pan and cool on a wire rack. (Slices into 12 even sized servings.)

This is one of my favourite muffin recipes. It is the old style of muffin, that is healthier than the newer style.

This is very versatile. Simply add any special ingredients that you wish, such as spices, grains, fruit, seeds or nuts.

Basic Muffin Recipe
(makes enough for 1 greased 12 cup muffin pan)

Ingredients:

2 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
1 teaspoon vanilla
1 whisked egg plus enough milk to make 1+1/3 cup liquide.
1/4 cup oil

Combine all the liquid ingredients. Set aside.
Combine all the dry ingredients. Add any special ingredients, if using them. Add the liquid ingredients, and stir only enough to mix and make everything moist.
Divide the batter evenly into a prepared muffin tin. Tap tin to remove large air pockets.
Bake at 275'F for about 25-28 minutes, or until the muffins are done. Remove the muffins from the pan and cool them on a wire cooling rack.


Variation Ideas:

Blueberry Muffins: Add 1 cup blueberries and 1 teaspoon lemon flavouring to the mixture.

Oatmeal Cinnamon Raisin Muffins: Add 1/2 cup oatmeal, 1 teaspoon cinnamon, 1 cup raisins, and increase the oil to 1/3 cup.

Apricot Almond Muffins: Add 1 cup diced dried apricots, 1/2 cup slivered almonds, and 1 teaspoon almond flavouring to the mixture.

Maple Walnut Muffins: Add 1/2 cup chopped walnuts, and 1 teaspoon maple flavouring to the mixture.

Orange Chocolate Chip Muffins: Substitute 1/2 cup orange juice for part of the milk, add the grated zest from 1 orange, and add 3/4 cup chocolate chips to the mixture.

These are just a few ideas, to give you a guide to how this recipe can be altered.

rose petel cheese cake

4 pkgs. Philadelphia cream cheese
grahm cracker crustr
1 cup plus
2 tablespoons flour
a pinch of salt
1 tsp . vanilla
4 egg yolks, beaten
1 cup sour cream
4 beaten egg whites
20 rose petels
prepaired grahm cracker pie crust
Allow cream cheese to soften at room temperature for at least 20 minutes.
chop rose petels into 4 peices. save 12 rose petels to top cheesecake.
Beat softened cream cheese together with 1 cup
Add 2 level tablespoons flour along with a large pinch of salt and vanilla, Stir in the beaten eggs. Add 1 cup of sour cream.
Bake in oven at 350°F for about one hour.

Sheet cakes are a potluck dream: the baking pan holds the cake and makes it wonderfully portable. This one is accompanied by an almond “cream” made from heavy cream and reduced-fat sour cream. Together, the cake and cream replicate the taste of Mexican chocolate with its undertones of almond and cinnamon. Or make cream cheese frosting and add 1/4 teaspoon almond extract.

Ingredients

Cake
•3 ounces unsweetened chocolate, chopped
•3/4 cup cake flour, (see Ingredient note)
•3/4 cup whole-wheat pastry flour
•1/4 cup unsweetened cocoa powder
•2 teaspoons baking powder
•1 1/2 teaspoons ground cinnamon
•1/2 teaspoon salt
•3 large eggs, at room temperature, separated
•3/4 cup granulated sugar, divided
•1/3 cup packed light brown sugar
•5 tablespoons canola oil
•1 teaspoon vanilla extract
•1 cup 1% milk

Almond cream
•1/3 cup heavy cream
•3 tablespoons confectioners' sugar
•1/3 cup reduced-fat sour cream
•1 tablespoon amaretto, or 1/4 teaspoon almond extract
•1 teaspoon vanilla extract
•1/4 teaspoon ground cinnamon

Preparation
1.To prepare cake: Preheat oven to 350 degrees F. Coat a 9-by-13-inch glass baking dish with cooking spray with flour. Alternatively, spray the pan with regular cooking spray, dust with flour and tap out the excess.
2.Melt chocolate in the microwave on Medium in 30-second bursts, stirring after each burst to ensure even melting, until completely melted. (Alternatively, melt the chocolate in a double boiler over hot water, stirring constantly.) Set aside.
3.Whisk cake flour, whole-wheat flour, cocoa, baking powder, cinnamon and salt in a medium bowl. Set aside.
4.Beat egg whites in a clean medium bowl with an electric mixer on high speed until soft peaks form. Beat in 1/4 cup granulated sugar in a slow, steady stream. Continue beating until stiff peaks form.
5.Beat the remaining 1/2 cup granulated sugar, brown sugar and oil in a large bowl on medium speed until combined. Beat in egg yolks one at a time, then melted chocolate and vanilla, scraping down the sides of the bowl as necessary, until combined.
6.Add 1/2 cup milk to the egg-yolk mixture, beating on low speed, then add half the flour mixture. Beat in the remaining 1/2 cup milk, then the remaining flour mixture just until combined. Fold in the whites with a spatula, using long, even strokes. Scrape the batter into the prepared pan, spreading evenly to the edges.
7.Bake until a toothpick inserted into the center comes out with a few moist crumbs attached, 25 to 30 minutes. Cool on a wire rack for at least 1 hour.
8.To prepare almond cream: Beat cream and confectioners' sugar in a medium bowl with an electric mixer on medium-high speed until the mixture is the consistency of sour cream, about 1 minute. Add sour cream, amaretto (or almond extract), vanilla and cinnamon; beat to combine. Serve the cake with the almond cream.

low carb low calorie chocolate Cake

Ingredients
1 1/4 cups all-purpose flour
1 cup sugar
1/2 cup baking cocoa
1/4 cup cornstarch
1/2 teaspoon baking soda
1/2 teaspoon salt
4 egg whites
1 cup water
1/2 cup corn syrup
2 teaspoons confectioners' sugar




Directions
1. In a bowl, combine the first six ingredients. In another bowl, whisk egg whites, water and corn syrup. Stir into dry ingredients. Pour into a 9-in. square baking pan coated with nonstick cooking spray. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar.

Nutritional Analysis: One serving equals 176 calories, 1 g fat (trace saturated fat), 0 cholesterol, 186 mg sodium, 42 g carbohydrate, 1 g fiber, 3 g protein. Diabetic Exchanges: 2-1/2 starch.

I found this recipe a few years back, online, but I don't remember where now. It makes super yummy banana bread, it doesn't even taste low-fat!

low-fat banana bread

Ingredients

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1 1/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
2 egg whites
1 cup banana, mashed
1/4 cup applesauce

Preheat oven to 350*F. Lightly grease 8x4 loaf pan. Stir together flour, sugar, baking powder, baking soda, and cinnamon. Add egg whites, bananas and applesauce. Stir until just combined. Pour batter into prepared pan. Bake in preheated oven for 50-55 minutes, until toothpick comes out clean. Turn out to cool before serving.

Makes 12 servings.

Found this recipe in my "Betty Crocker Win at Weight Loss" Cookbook. I've made it three times and have LOVED it each time.

Prep Time:30 min
Start to Finish:2 hr 40 min
makes:1 loaf (16 slices)
2 cups Whole Grain Total® cereal
3/4 cup water
1 tablespoon grated orange or lemon peel
1/4 cup orange juice
2 tablespoons canola or soybean oil
1/2 teaspoon vanilla
1 egg or 1/4 cup fat-free egg product
2 cups Gold Medal® all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh or frozen blueberries (do not thaw)
1. Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan with shortening, or spray with cooking spray. Place cereal in food-storage plastic bag; coarsely crush with rolling pin. Set aside.
2. In large bowl, mix water, orange peel, orange juice, oil, vanilla and egg until blended. In medium bowl, mix crushed cereal, flour, sugar, baking powder, baking soda and salt; stir into ingredients in large bowl. Gently stir in blueberries. Pour into pan.
3. Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf; remove from pan to cooling rack. Cool completely before slicing, at least 1 hour.

Just made these with my daughter this evening. They are the easiest cut out sugar cookies I have done yet. They aren't real sweet until iced. Probably for more flavor you could use lemon or orange zest and a tiny bit of juice from either. But what I liked was you don't have to refrigerate the dough and it makes about 4 1/2 dozen.

Easy Christmas Cut Out Cookies
Preparation time 10 minutes
Oven Temp 350
Cooking Time Don't exceed 10 minutes

Ingredients
4 cups sifted all-purpose flour
2 teaspoons baking powder
1 1/2 cups sugar
2 eggs
3/4 cup butter (1 1/2 sticks)
2 teaspoons vanilla extract
Colored Icing, recipe follows
Directions
Preheat oven to 350 degrees F.

In a bowl, stir together flour and baking powder. In another bowl, beat butter with sugar until fluffy and light. Beat in eggs and vanilla. Stir in flour mixture, a third at a time to make a stiff dough. Divide dough into 4 pieces. Roll out a portion of cookie dough to 1/4 inch thick. Cut out shapes using cookie cutters. Place on lightly greased or nonstick cookie sheets. Bake until lightly golden, about 10 minute, rotating baking sheet halfway through cooking time. Cool completely on pans about 5 minutes, transfer to cooling racks and cool completely before decorating.


Colored Icing:

1/2 cup confectioners’ sugar

1 1/2 tablespoons water

3 to 4 drops food coloring, plus more as needed

Colored sprinkles, optional

In a small bowl, mix sugar and water to form a thick, smooth icing. Stir in food coloring to reach desired shade. Drop icing onto cookies using a small teaspoon and smooth with the back of the spoon. Make additional bowls for additional colors.

Additional multi-colored sprinkles can be added on top of icing before it dries for more decorative cookies, if desired.

Chocolate Oat Clusters

1/4 Cup Dark or semi-sweet chocolate chips
2 Tbs Milk
2 Tbs Peanut butter
3/3 Cup Rolled Oats

1. Combine chocolate, peanut butter and milk in a sauce pan. Heat on low heat until chips melt
2. Stir in oats and remove from heat.
3. Place 8 spoon size clusters on wax paper. Refrigerate for 10 minutes.

These are delicious and surprisingly not unhealthy!

Blueberry & White Chocolate Chunk Ginger Cookies

I have substituted many different fruits to these cookies...
Preparation Time: 25 minutes Level: Easy
Cook Time: 35 minutes Serves: 24

These easy cookies are a real snap to make - just stir and bake.
Ingredients:
•1 cup all-purpose flour
•1/4 cup wheat germ
•1/2 teaspoon baking soda
•1/2 teaspoon salt
•1/4 teaspoon ground ginger
•1 large egg
•3/4 cup packed dark brown sugar
•1/3 cup canola oil
•1 teaspoon vanilla extract
•1/2 cup oats, quick-cooking or old-fashioned (not instant)
•2 ounces white chocolate, chopped
•1/3 cup dried blueberries, (see Tip)
•1/4 cup crystallized ginger, chopped (see Tip)
Preparation:
1.Position racks in upper and lower thirds of oven; preheat to 375°F.
2.Whisk flour, wheat germ, baking soda, salt and ground ginger in a small bowl. Whisk egg, brown sugar, oil and vanilla in a large bowl. Add the dry ingredients to the wet ingredients; stir to combine. Add oats, chocolate, blueberries and crystallized ginger; stir just to combine. Drop by rounded tablespoonfuls onto 2 ungreased baking sheets, 1 1/2 inches apart.
3.Bake the cookies until puffed and barely golden around the edges, switching the pans back to front and top to bottom halfway through, 8 to 10 minutes. Cool on the pans for 2 minutes; transfer to a wire rack to cool completely.

Tip: Dried cranberries or cherries will also work in place of blueberries;I have even used dried apples....
to make moister cookie add applesauce to recipe.

Love to bake but my hubbie has diabetes and I am fat. Most of the things I like to bake is not healthy for either of us. Any of you have that trouble?

I have to find some. I save recipes from magazines, SP, and other places. Even have a few that people gave me.

I started 3/6/07 at 149. I have lost almost 22 pounds.

ooh both of these recipes sound dee-lish! I am Christmas cookie hunting and I just may try the choc marshmallow recipe. yummy in the tummy that's for sure! haha

These are not low cal, but they are YUMMY. Enjoy if you try them.

DELUXE CHOCOLATE MARSHMALLOW BARS
3/4 cup butter or margarine, softened
1 ½ cups sugar
3 eggs
1 teaspoon vanilla extract
1 1/3 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
3 tablespoons baking cocoa
1/2 cup chopped nuts
4 cups miniature marshmallows
TOPPING:
1 1/3 cups semisweet chocolate chips
3 tablespoons butter or margarine
1 cup peanut butter
2 cups crisp rice cereal

In a mixing bowl, cream butter and sugar. Add eggs and vanilla; beat until fluffy. Combine flour, baking powder, salt and cocoa; add to creamed mixture. Stir in nuts. Spread in a greased 15x10x1 inch baking pan. Bake at 350 degrees for 15 to 18 minutes. Remove from oven. Evenly sprinkle with marshmallows. Cool.
TOPPING:
Combine chocolate chips, peanut butter and butter in a small saucepan. Cook over low heat, stirring constantly, until melted and well blended. Remove from heat; stir in cereal. Spread over bars immediately. Chill.

IN A PAN .SPRAY PAM; THEN LAYER POTATOES THEN A LAYER OF ONIONS;THAN THE BACON THEN ADD CHEESE.REPEAT INTIL PAN IS FULL.

BAKE AT 350 DEGREE;S TAKES ABOUT 1 HOUR OR DEPENDS HOW BIG OF A PAN YOU USE BEST WAY TO CHECK IS WHEN POTATOES ARE TENDER

This recipe is an office favorite as well as at home.

Power Bars

1-cup corn syrup
1/2 cup brown sugar
2 cups peanut butter
1 teaspoon vanilla
6 cups rice krispies
1 cup chocolate chips

Combine syrup and brown sugar in saucepan and bring to full boil. Stir in peanut butter and vanilla and remove from heat. Stir in rice krispies and chocolate chips. Press into buttered 9x9x2 inch pan. Chill for 1 hour.

** You may use creamy or chunky peanut butter.

With the holiday's coming up, the ovens will be filled with goodies that are baking. Use this forum, to share and swap any recipes you would like. And don't worry about those pesky calories, unless you really want to. I will post later (when I find it), but last year I came up with what we titled "The Triple Treat Jumbo Cookie". So to start things off I will share that recipe. Start a new topic for each recipe and let's start baking! emoticon
