We do a Rice and Beans dish with a mix of black, kidney and cannelini beans, brown rice, some pasta sauce or a can of tomatoes, and whatever cheese we have in the refrigerator. It's tasty, and with a veggie side dish it's a complete meal!

Mmmmm...love black beans! This reminds me that one of our favorites is Taco Salad. Lots of romaine chopped with whatever veggies we want to use and avocado. Then topped with either beans or ground chicken cooked with a taco seasoning packet contents. I like a few chips crumbled on top, then some light sour cream and lots of picante sauce.

For a quick one-pot meal, we cut up some chicken sausage with a can of black beans, tomatoes, and whatever veggies need to be used up. Some fresh herbs and goat cheese on top never hurts!

I always try to have a pot of brown rice cooked up. That lends itself in so many ways.

Frittatas and omelets here too. This time of year, big salads with some bread. There are a few things at Trader Joe's, which is right bon my biking or walking way home, that we'll build on.

What's your favorite go-to meal? At my house, we've always got eggs and vegetables, so omelets or scrambles are a quick possibility. Cottage cheese with fruit or picante sauce, usually with an Orowheat Sandwich Thin bun on the side, works for me, too.
