I love roasted veggies! Great to add to anything or by themselves.

One of my favorite things, to do, is roast butternut squash, pear or apple, onion, a bit of garlic, then puree and add some low fat chicken broth and skim milk, for a wonderful soup, season to taste.
Mmmmmmm! A great fall treat!

Noone has posted here in awhile, so I just want to remind everyone that roasted veggies are always in season (because you can roast just about every type of veggie), cheap (buy in season and on sale), nutritious and delicious. A pan of roasted veggies makes the house warm and the smell is great!

I have not made this in a long time, but I love it. I use canned tomatoes instead of tomato soup and tomato paste. Good use of carrots!

Despite the fact that I love black olives, and they are healthy, we usually end up leaving them out. My husband adds a bit of lemon juice to the recipe.

That was great!

I already made the first recipe - only with a bit of ground beef instead of a bit of roast.

I will post some of my seasonal favorites soon.

Greek salad for one.
A soup for another. (We are having the soup tomorrow.)

The turnip green and Kale are delish with some apple cider vinegar added to the water with a wee bit of crushed red pepper, and onion if you like. We let them simmer a couple of hours, or until tender, then let them set for a couple of hours. They are even better the next day.

Also, mixing various greens are tastier. My fav combo is Mustard greens, kale, and turnip greens.

Ok, here is a simple side.

Steam, carrots and potatoes til tender, fork mash together lumpy like, eat them as is or a little sea salt is good, once in awhile I'll spray a little butter on, but mostly plain is good. This drives the mother-in-law nuts!

How about a casserole?

Using a lb of ground beef, green beans, carrots, onion, potatoes, mushrooms, and other veggies if you like. 1-2 cans of Cream of Mushroom Soup diluted with a little water or milk, depending on the amout of veggies you end up with, this should be thick enough to coat everything (not quite gravy-like) as it will dilute a little during cooking.

Brown the ground beef with onion, mis with raw veggies, coat with soup mixture, and bake at 350 for about an hour. I like to cook it ahead of time and let it set awhile before I eat it. The veggies continue to cook a little more. Delicious re-heated.

The next fav is sausage soup. I use a lb of Andouille sausage, brown it with garlic and onion, add 2 cans great northern beans, tomatoes, zucchini, carrots, cabbage/kale/spinach, veggie broth. Simmer approx 1-2hours. This freezes well too.

My all time favorite is crockpot beef stew. I use a very small piece of a roast to shred once it's tender, mainly I want the beans for protein. No real measured amounts, but the ingredients are generally what's left in the house, primarily: small amount of beef, baby lima beans, canned green beans, canned corn, mushrooms, onions, tomatoes, cabbage, carrots, potatoes, and zucchini/any squash. Any combo of these veggies are good, all even better. I like to add chicken/veggie broth, and water to desired broth. Cook for 8 hours and what a yummy meal. It freezes well too. I bought s second crockpot this summer in order to have some to freeze, and this way I can divide my ingredients, and have plenty of broth too.
