thanks diane,sorry i haven´t been around theese last few days but it has been our eidon thursday and friday was still celerbrateing.thanks for the challange i enjoyed it and enjoyed reading other peoples reciepes.

Wow!

It's the 11th already!

Today I had tropical fruit salad. Banana, pineapple, and ricotta. It doesn't sound budget, but it was. The pineappole was on clearance.

I have been using Andouille Sausage and it tastes great!

One tip is that there are complaints about cooking time using dry rice. It works better if the rice is either cooked or I just used the Uncle Ben's Brown Rice in a microwave pack. I didn't heat it first, just put the rice in the pot as is and it turned out very well. The complain is that there isn't enough liquid or cooking time for dry rice.

Chef Meg's makeover - Mama's Red Beans and Rice. Delicious, healthy, and you can stretch that just as far as you want. The first time I made it, I made it w/out the spices and bayleaf since I didn't have them on hand. Either way is good.

Ingredients

2 T canola oil
1 large onion, diced
1 yellow or red pepper, diced
2 cloves garlic, minced
1 bunch green onions, sliced, green part reserved for garnish
1 lb. turkey smoked sausage
3 (15 oz) cans of kidney beans
1 ( 14.5 oz) can diced tomatoes with basil and garlic
1/2 t red pepper flakes
1 T oregano, dried flakes
1 t thyme, fresh or pinch dried
1 bay leaf, whole
1 pinch salt
1 t black pepper
1 c brown rice
1 c water



Directions
Slice sausage in half lengthwise and then in half again. Cut crosswise to dice. Heat oil in a large dutch oven or heavy saucepan. Once hot, add onions, diced pepper, garlic, and white parts of green onion. Cook until tender. Add sausage. Cook just until browned. Add spices, beans, and tomatoes. Stir to combine. Add rice, stir to combine and cook for 1 minute to coat the rice. Add water. Bring to a boil and immediately reduce to a simmer. Cover and continue to cook for 25 minutes or until rice is tender. Remove bay leaf before serving and finish with hot sauce and sliced green onions. Makes 12 hearty one-cup servings.

Vegetarian smoked sausage (found in the refrigerated health food section of most supermarkets) makes a great substitute for the turkey sausage.

i really liked the panzanella. I won't say it was the best salad that I have ever eaten, and it is similar enough to other things that I eat on a fairly regular basis in the summer that there was no absolute wow factor. However, it was really good and a nice change from my regular fare.

I rubbed the bread with garlic before putting it in the salad, and I loved the gentle garlic flavoring.

I will definitely make it again.

(Mine had some cheese in it for protein, plus tomatoes, one cuke, some red and green pepper, a little cauliflower, basil, parsley, whole wheat bread rubbed with garlic, and Italian salad dressing.)

yes i saw that reciepe but i didn´t like the look of it.let us know what it taste like diane.

today i am having a cheese and spring onion omelette.one of my favorite quick meals.

2 eggs,a splash of cold water,1 handful of low fat cheese,i spring onion,dill,a good non stick frying pan.

yesturdays reciepe i forgot to post i made a pea soup using dried peas,one potatoe,one,carrot,one onion and some dried mint,salt and water.

Last night we had spaghetti with tomato sauce. We have a whole bunch of sauce in the fridge that I made last week because we had so many tomatoes in the garden. Since there was no meat in the sauce, for added protein I added a few spoonfuls of ricotta to the spaghetti before putting on the tomato sauce.

Today I'm thinking about making panzanella. I've never made it before. It was featured in a dailySpark blog a few days ago.

It uses tomatoes and bread and whatever you have on hand. If I make some bread, I should have all the ingredients. (Mind you, I think it calls for stale bread. I will have a look and see if we have any of that tucked away, that has not been made into bread crumbs yet.)

by us it is cold and raining so my reciepe is a potatoe gratin.

peel,slice and blanche some potatoes
dry fry some leeks(cheaper than onions this time of year)mushrooms and mixed peppers(on offer by us for 88cents for 500gms)mix in some no fat milk with half fat cream,some herbs of your choice,mustardand salt.place the potatoes in an oven proof dish.pour on sauce,sprinkle some lowfat cheese and breadcrumbs on top,slice a beef tomatoe lay on top down the middle for decoration and bake in the oven for 20mins(or until cheese melts and goes brown)on 220.serve with a side salad.

Greetings!!! It is suppose to break a record today, in Enfield ME. It is expected to reach 100 degrees.

I am in a 12 Step Group called Serenity of Millinocket (it is the 12 steps through scripture with the biblical comparisons)

We are having our last meeting at camp this afternoon. We are having a huge healthy, lean cookout!! Tons of fun and people.

Since it is very hot today, I'm planning a cool menu.

Leftover cold chicken legs

Tomato salad
Turnip sticks

with a choice of fruit or yogurt for desert.

Raw turnip?
I thought it was strange too. However, I tried this recipe, and we found the turnips interesting. (We decided we rather eat the carrots plain though.)
