If you poke around the food sites a bit, you will see that green smoothies are become more popular. These are healthful smoothies that include vegetables, typically leafy greens like spinach, or even broccoli. You can even include a cup or two of fresh spinach in a smoothie without being able to tell it is there! If you have family members that have trouble with vegetables, here is a great way to get them in.
One recipe (it comes out purple and tasting great):
1 individual container of yogurt (I use berry-flavored soy yogurt) 1 cup of unsweetened soy milk (sweetened is okay, too; I just buy the unsweetened) 1 cup of frozen or fresh blueberries (or a berry mix) 2 cups packed fresh spinach optional: 2 tablespoons freshly ground flax seed
Blend the ingredients until smooth and thick. This makes about 20 ounces of smoothie with a total calorie content of about 330 kcal (without flax).
