I had never tried soy beans before but they had samples of pre packaged and frozen soy beans at the store the other day. My son and I both tried them and liked them. So we bought a box of them. They only take 3 minutes in the microwave to warm up. They have to be popped out of the shells but they are good.

They take so long to get out of the skin. I agree, very tasty, but very messy. How about a Mango? They are really odd to peel also.

I tried a pomegranate last night. It was good. BUT, it's super messy and stains your clothes if you get the juice on you! I suggest you read a couple of articles on line about how to eat one if you've never tried it! It's very tasty, but does take a little time to actually eat it!

Has anyone ever tried rutabaga or kohlrabi? Both are really good fresh, eat them raw with a little sale and pepper. Yum!

Just wanted to metion that I tried something different. I bought some pre-cut turnip and put it in my stir fry one night. I liked it.

The hubby hates potatoes and thought that I had cut up potatoes and put them in. Wasn't he surprised when I told him that it was really turnip and I had decided to switch things up a bit..... hehe......

I just found this challenge and even though I'm getting into it late I think I'm going to try it. There is a lot of veggie's I haven't tried yet.

I tried butternut squash. It was a hit at my house and super easy to cook. I sliced it in half removed the seeds, added cinammon and baked @350 until it was tender.

I started making my own California rolls (Non-raw sushi)today and rolled seaweed, cucumber, sweetwater sprouts, carrots and crab meat into sticky rice. I don't eat cucumbers and have never had the sprouts before but they were great this way!

Thank you for the challenge, I think it is sad that where everyone seems to be questioning the veggie portion of the challenge the part I see difficulty with is the 3 nice things about myself. However, I know it shouldn't be that difficult and I think this is a great way to create a positive self-image.

I'm up for the challenges - I am just a little flummoxed by the fruit/vegetable challenge since I've tried just about everything (worked in the food industry for many years). I could try three things in a different way...

Anyone have any suggestions?

Sounds like fun. Got to see what new kinds of veggies there are in the stores. Yep, I can step up my exercising by 25%. (only doing 30 min now).

Well, I said a couple of nice things to myself this morning. "Wow, you don't look as tired as you feel this morning." :) lol.
I do not believe that there is a vegetable out there I have not tried. We have two huge gardens in the summer and have grown most everything. Not turnips -Even my least favorite vegetable that I have tried cooking every way possible to make it taste good. Brussel sprouts. Ugh!
I am walking for an extra 15 minutes today. I brought my shoes to work with me.

I'll try to get in more exercise, but I already do about 45 min to an hour at a time. New veggies huh???? I'll have to go shopping and see what I can turn up.

I actually have a ton of veggies I've never tried. Like parsnips (which are supposed to be like carrots, but have a stronger flavor I guess), artichokes, egg plant, endive, rutabegas, turnips, etc...there's a lot. This is a little nerdy but here's a fun fact about carrots: Did you know that carrots used to be purple, white, or yellow before they were ever orange? Or that they tasted bitter? The Dutch cross-bred the carrot and improved the taste! Check out this site if you want to know more:

Wow I like this challenge, I can tell you I don't think that I can step up my exercising anymore then the hour that I'm doing but I will try. As for the fruits and veggies, I think the only ones left are the ones that I defiantly don't like, ie peas, bustle sprouts I can't put those in my mouth. However I think that what I will do is buy the veggies that I don't normally eat like asparagus and fresh green beans.

Okay guys, here's the new challenge (not as much this time!).

1) Say 3 positive things about yourself every morning when you look in the mirror.

2) Step up your normal exercise time by 25%. Just multiply your current time by 1.25. (If you usually exercise for 20 mins, you'll now exercise for 25 mins, 30 mins to 37.5 mins etc...)

3) Try 3 new veggies or fruits that you've never tried, but always wondered about over the next two weeks and post about them!
