I started doing the soup idea this week, and it's really been handy, especially while i'm sick and not too motivated to make meals all the time.
Also, it's nice to know even Tosca gets lazy and just grabs an apple and some almonds as well! Not such a guilty quick fix anymore! haha! emoticon

Tosca's Tips:
Lazy Lunches

Itís a lazy Sunday afternoon perfect for relaxing. You sit down with the latest issue of Oxygen, and all of sudden your tummy starts growling! The last thing you want to do is get up off the couch and prepare a complicated afternoon spread for yourself. Here are some options to be prepared for moments like this:

Always have fresh apples on hand. They can be paired with nut butters of any kind, or a handful of almonds for a quick tide-me-over. Check out your local apple farm for a bushel of natureís candy. Apple picking is one of my favorite fall activities. Grab the kids and get outside!

Have whole-grain wraps at the ready. These are easily paired with a few spinach leaves, alfalfa sprouts, a homemade hummus spread and leftover chicken for a perfect Clean-Eating combination.

Leftovers leftovers leftovers. I canít stress enough how excellent these are for days when cooking is your last priority Ė or when you simply donít have time. This often happens to me after a photo shoot: Iíve been away since 6 am, the kids are hungry and itís now 7 pm! Leftovers to the rescue. Always prepare more than enough of your Clean-Eating meals so you can have leftovers when needed.

Fruits and veggies at the ready. When I get home from the grocery store I take a few minutes to wash lettuce, cut up strawberries, and slice some carrots, cucumbers and broccoli before putting them in the fridge. Howís that for a healthy pre-made quick snack or lunchtime accompaniment.

Soup du jour. At least once every two weeks I find time to prepare homemade soup. I store it in the fridge (and sometimes package it in individual containers in the freezer) and grab it whenever the need arises. My soups are much healthier than canned, processed varieties full of sodium and preservatives. Paired with a piece of whole-grain bread or on their own, they make a perfectly quick Eat-Clean dish!
